Swede here, its called "Gravad Lax" and its like pickled salmon. You put thin Salmon slices in a bag with peppers, salt, sugar and dill and let it sit for some days and then remove the liquid from the bag. Tastes amazing

Even if you do not put oil in the dough, sure you MUST pour a little string of olive oil in the pan, and right in the pan focaccia is leavened a second time for 4 hours circa before it is cooked in the oven. Second leaven and cooking in an oily frying pan are the main differences that make focaccia higher than pizza and with no crust. 😀

You two need to make a movie or something. Hilarious but subtle interaction is the best chemistry and you two have it. This guy is like your dad, mom, older brother all in one (the older brother that taught you things..not the one that beat you up.)

Maybe do a show with Mark where he makes a calzone with non-standard-calzone ingredients but when mixed together they are delicious as heck! Great episode btw keep em coming!
Im always happy that Mark is not like a lot of traditionists in that he only appreciates traditional food. He likes good food when he sees it and that's why his pizzas are great.

Focaccia is higher, and doesn't have a crust
Also focaccia and Roman pizza are basically the same, but focaccias are more fluffy and taste different
