Thank you. There are a handful of things I really miss on my low carb diet, for the past 4 years, and none of them have so sorely been missed than pizza. While I have been hearing about cauliflower crust pizzas and almond flour crust pizzas from others who do low carb, I have always been skeptical of how similar they could possibly be to actual pizza. However, if the cauliflower crust was good enough for Mark, at least upon initial tasting, maybe I will give it a shot. Finding a decent substitute for the wheat flour pizza crust, which at least closely approximates the flavor and mouth feel of the genuine article, is like me finding the Holy Grail.

@@markbeiser I just made one of these myself - I didn't need to dust it with flower to roll it out, I just pressed it out into shape with my hands onto grease proof paper on a baking tray, then slightly pre-cooked the base then left it to cool before topping it and then baking it just like a normal pizza. After being in keto for the last two weeks, it was just what I needed - satisfied all my pizza cravings!

Also, it usually has to be baked beforehand, then toppings are added and it goes back into the oven. Also baked at lower temperatures than you'd use on a usual thin crust pizza. I'd love a cauliflower crust recipe that can go right into the really hot oven on a pizza stone with the toppings already added, like they do it here.

Love this video I always wanted a proper pizza guru to tell his opinion of a cauliflower crust pizza . If am making this crust I would add some lightly boiled and minced potatoes it will definitely give the elastic feel and movement of a flour maybe even polenta flour ! There are ways to make it less flaky and more elastic if that's the way you like it. Also the Cauliflower could be made into fine flour instead of leave it grainy that also definitely will help the grainy feel and elasticity .
I make cauliflower-crust pizza at home. I use 2 cups shredded mozarella, 2 cups grated cauliflower and 2 eggs to make one roughly 12 inch pizza. Cook at 450F on parchment paper without sauce or toppings until it starts to brown then remove, add sauce and cheese, and cook again until cheese is cooked right. This recipe makes the 'dough' seem somewhat quiche-like. It comes out thin with a nice char on the bottom, but it's quite spongey. I'd like to know how to make it more like this guy does. BTW if you love pizza, but happen to be on a particular diet, this type of pizza is so worth doing. Once I'm done with the keto diet I'm going back to real dough though. Maybe next year.

Places like red robin and many other restaurants are offering it already. I just prefer the lettuce over the bun so I can eat more fries, lol.

Tip: You can still add yeast to the cauliflour dough... as a seasoning. It won't do anything to cause the dough to rise, but it will impart the yeast flavor expected of a good pizza dough. The same is true of other low-carb bread recipes. Still add the yeast, but as a seasoning and not a leavening agent.
