    Good looking pork belly! Does it taste more like pork ribs or grilled thick cut bacon? Thanks.

      It tastes like both actually.
      So good!, yes it’s fatty as any pork belly would be but grilling it hot and fast brings a whole new level of flavor to it.

    Can you do a fire management video on the Santa Maria grill. I normally start cooking when the wood turns coal like but I noticed you cook on high flame. Iam guessing you get better smoke flavor this way?

      Appreciate the comment dm. Yeah I will do a management video soon.
      The flames are more for show than anything. I also get impatient waiting on the wood to burn down to coal.
      You are correct though, the flames do provide some smoke flavor but it’s not sustainable because your food would burn under the flames if left for too long.
      I have a fascination with the flames “kissing” the meat
