Whenever I test food I cook and grab the paper towel roll to wipe my face, my kids get excited cuz dinner will be great and my wife is disgusted as usual. Thanks for the great work fellas

A suggestion: adding some finely chopped onion to raw ground lamb helps mask some of its weird lamb smell and leaves more of the deliciousness.

try making a Mediterranean/Arabic inspired burger with pita as a the bun and Tahini + Garlic + Lemon juice + Little salt as the sauce (No cheese, and you can add water to mix the sauce if it gets too much) some sumac onions and parsley as the salad.

As a New Jerseyan, this kind of reminds me of the Italian hot dog place called Jimmy Buff's. The roll is cut like how you cut the pita and it's filled with 2 hot dogs, onions, peppers and potatoes. It is so good and I would love to see you make it.

Insadong and Myeongdong literally have the best food in the world. For those who plan on exploring Seoul, Korea go to the Yongsan-Ga district and double check if the Raccoon Cafe is still there.
No, they don't serve raccoon. It's just a cafe with an awesome cake and tea and when you're done you can go into a room and play with raccoons (they like to dig in your pockets so leave your stuff at the table with a friend). It's quite fun.
They also have a fantastic coffee chain called Angel in Us Coffee. AUC and Pancake House have the best coldbrew in the world (IMO)

When you put the meat into the bread, why did you not put the rounded part in first so it matches the pocket bread? Seems you could get a better fit of the burger into the pocket bread.

There's pet hair all over Sam's shirt, just to prove how real this guy is! Met him while touring Colleges in Cali last July, couldn't have been nicer at Not Not Taco's in little Italy were legendary.

Steam that pita! Makes it 10x easier to open up and it stops it from breaking apart.
The pita open the easiest way if you put them 15 sec in the microwave.
slimme it open and then in the toaster or plate/bbq

I would be all over this one. I am so fortunate that my two wonderful daughters have loved lamb since they were little kids... so I served it often. I can also highly recommend that people make their own pita breads. It's really easy, it's a blast to watch them puff up in a hot oven, they're waaay easier to fill, and they blow store-bought pitas right outta the water.
Hoping to see a bison smash burger. The difference between the flavor of bison and beef is subtle but it's great.

Beef mix of brisket, chuck and short rib
Two pattie’s on a martins potato roll with american cheese. Add pickles and carmelized onions. Then try this burger sauce!
1/3 mayo, 1/3 yellow mustard, 1/3 favorite bbq i prefer a carolina. add a worcestershire and a little pickle relish!

I have been trying to think of proteins that could be smashed for a burger or sandwich and I have to say it ain't easy, is it? How very creative this smashed lamb pita was today! It looks delicious. I am very happy to be going to dinner at a Greek restaurant in about an hour, because now I am hungry for lamb! And garlic aoli and pita bread.
I've found that lamb is hard to buy in America - I never see it in meat sections of stores. Do you have to put in a special order, or go to a speciality delicatessen?

I just made a 2lb summer sausage, 50/50 lamb/90-10sirloin. Used Gyro seasoning and feta cheese. Frickin....epic.
