I’ve been watching lots of these videos! I had a question about sour flavours - what would the staple sour flavour source be for indigenous food? Of course citrus in Mexico and the southern areas, but I wonder if they made any types of vinegars? What about the northern areas like the PNW?

Maple vinegar and fruit vinegars are both very traditional. Prickly ash is also a great way to impart sour flavors!
