Hey Camorra, That was not a Bundt pan that you baked the Pineapple Pound cake in, it’s an Angel food cake pan. A Bundt pan has lower sides and are more decorative than an Angel food pan. Cake looked yummy, thanks for the recipe.
Giiiiiirrrrrrllll!!! I love that you old school with it. Even though they have that Baker's spray, I STILL use the butter & flour method & I flip my cakes over on that top side. That crunchy buttery top side is sooooo good!! Your cake looks super moist. That extra pineapple juice deliciousness, seeping all up and through that cake is gonna make it extra moist. In my Dj Khaled voice AND ANOTHER ONE!!
I live in Texas! Here we have an extract called "Adams" it has a Pineapple Extract, and you can order it online! Also there's a brand called Lorann Professional Extracts that you can get online, or if you have a "ROSS" Store in your area that's where I find the Lorann products back in the kitchen area where they have spices and extracts!! It's cheaper at ROSS'S than online! Another thing you could have done was to take some of that pineapple juice you had and put about a half cup in your batter and decrease some of your evaporated milk! Just some helpful tips I thought you might like!! 🤔🤨🧐😉🥰✌🙏

Cream cheese pound cake is so good! I actually use cream cheese in my sweet potatoe\ pound cake. The cream cheese is blended with the butter and sugar for 8-10 minutes until its very whipped. I made this cake last night, it came out very good! I will say I am not a baker so this recipe I felt took a really long time to come together, but again that could be because I don’t really like to bake Highly recommend, though my cream cheese clumped up as well. I wasn’t able to save it by using the mixer it just kind of stayed clumped any tips for that? Thanks for the recipe!
pound cakes take a long time to come together. usally they need over 1 hr 20 min to bake plus alot of time for the beating. but worth it to me 😀. was the cream cheese room temperature? usually if its cold it will stay clumped no matter how much you beat it. also, when push comes the shove I will just put it in a blender and that will always force it to come together.

My only suggestion abt clumping cream cheese and pineapple is maybe that enzyme in pineapple that does strange things to proteins? I have not researched this but the cake looks like something I would bake.

Yes this recipe can work for that. I would add shredded coconut to the glaze and some coconut extract. You also can add some coconut extract to the batter. I would also swap evaporated milk for sour cream to give a tang. Would be so good! I want to make it now 😂

I don’t know that book, but I’m pretty sure this is Jamaican black cake. The color is from browning. It can be found in Caribbean stores. It’s a Christmas dessert, so I’ll see if I can post a recipe closer to the holidays

Also, the fruit in the cake must marinate for 4 to 5 months, which is why I thot I might get going on that part, LOL
yes typically is does sit that long. however there are ways to do it more quickly. you can soak rasisns, golden raisin, prunes, and cherries. in jamacian rum and port wine like red label wine in a glass. make sure the fruit is full submerged. Cover with more wine and rum as the fruit soaks up the liquid. you can let it sit minimun 5 days or months (to years actually as long as its cover in alcohol) browning is made like that, but can also be bought in a bottle.
