It's covered in pesticides and chemicals too. Use vinegar and bicarbonate of soda to remove these toxins before cooking.

What is the sheet supposed to do?

Thank you for watching. The purpose of this sheet is twofold: first, to thoroughly soak the broccoli, reaching the core to remove any dirt. The other reason is that if there are any insects on the broccoli, they will gather on the sheet. In other words, it helps to more effectively remove any insects.

Soaking it in water alone is sufficient to remove dirt. If you're additionally concerned about pesticides or insects, adding vinegar or salt to the water and letting it soak is also a good method. Either way, both approaches will effectively clean the broccoli, so both are correct.☺
