Level Up Your Nachos: The BEST Vegan Nacho Cheese Sauce!

  • Vegan Nacho Sauce
    Full of flavour…this nacho sauce, though not the same as dairy nacho sauce, but is delicious with tortilla chips or drizzled on a plate of nachos.
    Ingredients:
    2 med (red or white) potatoes peeled, approximately 2 cups
    ¾ cup peeled carrots
    1/4 cup neutral oil like canola or safflower or sunflower
    1/2 cup water
    1 tbsp lemon juice
    1/2 cup nutritional yeast
    ½ tsp garlic minced
    1 ½ tsp onion powder
    ⅛ - ¼ tsp cayenne powder and/or chipotle powder
    2 tsp tapioca starch
    1 - 1 ½ tsp salt (start off with 1 tsp and then taste and adjust)
    1 tbsp melted vegan butter
    ½ of a medium jalapeno, finely chopped and set aside
    Instructions:
    Chop potatoes and carrots. Boil and cook potatoes and carrots in a pot.
    While potatoes and carrots are cooking, chop jalapeno finely and set aside.
    To a blender, add potato, carrots, vegetable oil, water, lemon juice, nutritional yeast, minced garlic, onion powder, cayenne/chipotle, tapioca starch, 1 tsp salt and melted vegan butter. Blend until smooth.
    Pour into a serving bowl.
    Stir in jalapeno and serve.
    Note: To use as a cheese-like sauce, omit jalapeno and cayenne or chipotle. You could add ¼ tsp of mustard powder, if you like.
