The BEST Vegan Singapore Noodles Recipe (Seriously!)

    These curried noodles are incredibly flavourful! Mildly spicy curry melds with lime and tamari. You’ll be arguing over who gets the leftovers for lunch the next day!
    Ingredients:
    1 package of rice noodles (400 g)
    2-4 tbsp vegetable oil for stir frying
    1 onion, sliced
    2 garlic clove,minced
    2 tsp finely grated fresh ginger
    1 carrot, sliced into small strips
    ½ red pepper, sliced
    ½ head of broccoli, chopped into florets
    ½ cup snow peas, sliced
    1 block extra firm tofu (454 g)
    ½ - ¾ cup vegetable broth
    ¼ cup lime juice
    ¼ cup tamari sauce
    ¼ cup vegetable oil
    1 tsp toasted sesame oil
    4 tsp (10 mL) curry powder
    salt to taste
    ½ cup (75 mL) chopped fresh Cilantro (optional)
    ¼ cup green onions (optional)
    Instructions:
    Cook noodles separately according to package directions(my noodles' directions were to boil water in a pan and cook noodles for 2 minutes), drain and return to a pot. Toss with a little vegetable oil so that the noodles don’t stick together.
    Slice the onion, mince garlic and grate ginger. Cut the carrot into small strips, slice the red pepper, chop the broccoli and slice up the snow peas. Set aside.
    Press tofu. Cut up the tofu into small strips or cubes.
    For sauce, whisk together tamari, lime juice, vegetable oil, toasted sesame oil and curry powder. Set aside.
    In a pan, heat up 2 tbsp oil and add the tofu. Brown the tofu a little bit. Add vegetable broth and cook tofu until the broth is absorbed and browned. Remove and set aside. (I prefer to flavour tofu in my stir fries…so adding the vegetable broth is optional. You can just brown the tofu if you prefer.)
    In the same pan, heat 1-2 tbsp of vegetable oil. Add onions and cook until translucent. Add ginger and garlic and cook for 1 minute. Add carrots and cook for about 1-2 minutes. Add the red pepper, broccoli and snow peas and cook for 3-5 minutes. Add tofu back into the pan and cook until heated. Keep warm and set aside.
    To the noodles, add tamari curry sauce. Stir until well combined. Add tofu-vegetable mix. Stir again making sure everything is combined.
    Top with chopped green onions and chopped fresh coriander when serving.
    Suggestion: Instead of tofu, you can substitute edamame for your protein.

    Ok that's yummy looking. Fun 🎵 made the video feel like I was watching a cooking competition! Will definitely try this one.
