    I like to add 1 or 2 tbsp yellow or red lentils to the boiling water too it adds more fibre and protein and makes the texture even better

    alternative to the jalapeños: aji amarillo paste! it is a peruvian pepper that is yellow and very cheesy. a little bit of this paste adds a great heat, tang, and cheesiness!

      @@lbrown6859 if you have a good latin market near you, you should be able to find it there. otherwise you may need to. i live in the UK and Italy, but i looked around on USA websites and it seems Fresh Market has a couple brands in their stores.

    oh girl! I've followed you for years -so many great recipes, THIS is my fave! I'm coming off a 26-day detox and this was a great meal with homemade chips cooked in my air-fryer. Yumm! And it was so fast and easy to make ~ Thank you! I'm already thinking up all sorts of things to put this sauce with! 🤩

      ​@@PlantifulKiki can I ask why you leave it out? I just found your channel and this looks delicious but I was wondering how cheesy it tastes without any nooch in it. That typically helps make vegan cheeses taste cheesy, and as an admitted cheese lover lol, wanted to ask if this actually has the cheesy flavor? Is there a reason you're leaving the nooch out? I'm not at all trying to snark or anything, I'm genuinely asking as I wasn't sure if someone is wrong with nooch that I'm unaware of or you just don't think it needs it.
      Regardless, thanks for this recipe! Oh! What kind of potatoes do you like to use for this? Thanks so much for the recipe. I will have to try it soon. I'm glad I found your channel and look forward to trying out some of your recipes!

    My husband who is a “meat and potato” kinda guy had no idea this was vegan nacho cheese. This is the best nacho “cheese” I have ever made. Thank you.

    Looks so amazing! What kind of chips are those? Because most chips have so much oil. I'm just wondering if you cut up the tortillas and baked them or what. Thanks so much!

      She has a video for the oil free tortilla chips. I believe she does corn tortillas cuts them to bite size and bakes them at 400 for 10-15 min. On a baking sheet lined with parchment paper. She also will squeeze lime over them and add salt or chilli lime seasoning. Seasoning is optional.

      try aji amarillo paste! but fresh works well too, just add a dash of vinegar. the tang helps add the nacho cheese flavor.

    It’s hard to know how much jalapeños to add. I added two slices plus some juice and it wasn’t spicy enough for me. 😂 Also, should it be refrigerated? Thanks!

      You can buy raw unsalted cashews at Costco. They have the best price. You probably can buy them online as well

    I have a question.... I have wondered about substituting sunflower seeds for the cashews. Has anyone tried this? I am deathly allergic to all tree nuts. But... would LOVE to try this!!!

      With most recipes sunflower seeds are a great substitute for cashews.

      You can also use a can of cannellini beans instead of nuts or seeds. It gives it some creaminess but is much lower in fat!! Personally I prefer it without the nuts or beans, but that’s just me 😊

      I used golden potatoes because the skin is softer and they have a different flavor. I also found I had to add nutritional yeast for my taste. I also used white beans (navy or cannellini beans instead of cashews). I play around with the amount of nutritional yeast and seasonings for my own taste.

    Tried this and it tasted weird and bland. Followed her recipe to a T as well. It wasnt yummy @ all. 😐

      Well you're FAST! She just posted it...
      I'm not sure how a sauce that contains salt, garlic powder, onion powder, jalapeno brine and jalapenos can be bland, but you can always add more of each, to taste...

      Yeah, I personally changed some things up for my taste but found the primary thing to follow was the amount of potatoes and carrot and reserving the starchy water to be the necessary foundation. From there I subbed beans for nuts, added nutritional yeast and even a bit of vegan Worcestershire sauce or tamari and liquid smoke, etc.
