Hey Justin back in my old high school days when I was playing this I learned a lot of tricks that can beat him easily ! It took me years to learn them when I was younger but its a crazy fireball trick that works on him every time ! Its like every time you get a knock down or sweep you can literally catch him with a delayed fireball on wake up with ryu or ken and akuma will get hit by it every time ! It works best with ryu because his red fireball will knock akuma down instantly once it hits him if its timed perfectly ! I still have my old vhs tape of me going through the game on the hardest level with akuma without losing any rounds ! The fireball trick works on almost the entire cast actually, you just have to catch each character in the right situation after a knock down to do it ! I can post the video up for you to see it at anytime just let me know if you would like to see it !

You know... you could had a faster time between rematches if you had used Zero 2 Alpha instead (you have to hold mid-punch and kick at the title screen before pressing start, if you see blue flame at the character select screen you're good to go), of course, in Alpha Anthology the Alpha 2 version you pick doesn't matter, but in Alpha 2 you only know if you see the Akuma intro sequence sprite at the next opponent screen if you got it right, you also fight in the Australia stage instead of your character final opponent stage (of course, Sagat fights in the Australia stage against Shin Akuma like if you use the cheat). Edit: Of course you had to use save states because you used vanilla Alpha 2 were the cheat code cannot be used (unlike the Alpha Anthology port on Ps2), also funny thing, you could fight Shin Akuma twice in the SNES port if you play as Shin Akuma.
