Yes it’s vegan if you use plant milk to clarify for anyone who is confused. Soy milk is most typical but you can always just blend up some oats and water for an easy oat milk if you need plant milk in a pinch. I do this all the time if I run out out of soy milk but need something for my smoothies💯💚
I make this for my family so the time using King Arthur GF flour. It's best when you brown it in a hot skillet with a dab of vegan butter and top it with fresh mashed berries(great use for overripe ones)

I tried it once just to live history and it good interestingly I haven't had it since because I don't want to die early but it did taste good. I spread it on the bread when it was hot. lol I make this same recipe every 2 weeks for meal prep, I just call it baking though. Peanut butter and yogurt (I don’t drink milk; yogurt and alternative milks have longer shelf lives when I do partake) and if it’s in the budget paired with fruit or nuts mixed in. That's actually a healthy fat. Stay away from margarine and seed oils! Those are the bad oils that will clog your arteries.
