Apple Smoked Mackerel in a kettle BBQ

  • Smoking fish is a traditional means of preserving food. Not something we rely on quite so much in this age but smoked food just also happens to be delicious.
    Using some apple wood chips and charcoal, I smoke some fresh mackerel fillets. My biggest dilemma is waiting for the fish to be cold, leaving them overnight in a fridge the flavours develop and mature but they taste so good they typically don't hang around that long.

    I have some beechwood and jack daniels chips would these go well with it? Where do you get you chips from?

    I watched this with an eye on the past, smoking the raw fillets on a very basic charcoal grill, wonderful.
    But I thought I had clicked on Terminator 5 when that motorised pepper grinder appeared. HASTA LA VISTA BABY.
    Still, looks divine, will try once spring arrives!

    Looks delicious, I'll try that. They're very cheap where I live, we call them Saba.

      In Thailand, I'm English though. They also call it Saba in Japan. Will definitely try your method this weekend.

    10 mins is too short. The fish is probably raw. You need at least 20 mins.

    Pepper, chilli, olive oil, sugar - have you thought you might like the taste of the fish?
