Hi, think you'll find you put the racks in upside down, the rack with the bracket goes in with brackets up so the other rack clips into the brackets also they then become handles to lift both racks in and out.
Does smoked mackerel freeze better than fresh mackerel . Does having brined the mackerel therefore help when the smoked mackerel is frozen ? Or is salt not relevnt to freezing ?
Excellent presentation Peter. Is that a Snowbee smoker? Looks similar to the one I have! Caught some rainbow trout yesterday, and after watching this they are gonna get smoked this afternoon. 👍
What, no brine?? You are missing a great taste experience. Check out the brine recipe here: www.boat-angling.co.uk/how-to-smoke-fish/ You are also smoking them too wet which is why they fall apart. You need to air-dry the fillets and also make sure they don't crowd the smoker otherwise they part-steam rather than smoke.

Always use my weber to smoke mine! I brine them in a mix of salt and chilli! Bloody lovely especially for breakfast
