a Brie and sweet coarse ground mustard filling surrounded with a weisswurst style ground sausage then wrapped in thin bacon is a favorite variation at my house

It’s your brother from an Australian mother here, I just did something no one else on YT has done and I’m giving you this gift to try for yourself and expose it to the world you will love it, I cold smoked eggs in their shell for 12 hours, lo and behold the smoke flavour penetrated the shell and they were awesome, trust me it’s a game changer, I had them on a reverse sear rib eye and holy crap

A 1/2" spiral drill bit is also DOPE for getting seeds and the "core" out of jalepenos. The flutes of the drill bit draw the seeds and stuff OUT of the pod. It's dope! (I already said that).
I like to slice them up into 1/2" thick pieces, line them up in a row, drizzle with ranch, Franks Red Hot sauce & fine cut parsley (for presentation) and serve them as BBQ sushi. Next version: Stuff the jalapeno with a mozzarella string cheese stick, wrap in your spicy italian sausage and then wrap in Italian style bacon...Drizzle with marinara!

Chud, deer season is coming (technically it’s open for a lot of your viewers already). We need a dry sausage video (50/50 deer and pork shoulder), beef casing, cold smoked and hung to dry. This is unique to central Texas and I’ve never seen it elsewhere. Granzin’s (and some other butcher shops) in New Braunfels has it year round (beef and pork of course). That, combined with a batch of buck sticks is a sure bet to not waste good deer meat.

Oh I just thought of a different thing to do with this idea. You can still smoke the cream cheese but instead of wrapping in bacon and smoking the whole thing, buy a box of stove-top stuffing, toss the crumbs from it into a food processor until you get tiny bread crumbs, then use that as your bread crumbs to deep fry.

I love jalapenos, stuffed with a mixture of hot Italian sausage, cream cheese, cheddar cheese, all nicely wrapped in bacon and smoked or grilled. Talk about yummy. Mix a little taco seasoning into the cream cheese and it's even better than yummy.

Honestly, once you remove all the pith and seeds there's virtually no heat in Jalapenos. My father in law has eaten and loved Armadillo eggs (and Jalapeno Poppers) even though he thinks anything with more than a hint of cracked pepper in it is "a bit spicy". Give it a try, you might be surprised.

I made some jalapeno poppers with thick cut bacon on my smoker. WIfey was rushing me so they didn't get done all the way. I've never thrown up more violently in my 48 years. Learning is sometimes painful.

I kinda want to see a variation on this with a Game of Thrones theme. Dragon Eggs. Maybe use a spicy alligator boudin stuffed jalapeno as the center, wrapped in buffalo chicken sausage, wrapped in bacon, smoked, and then battered and deep fried to a crispy exterior. And much like dragons, these might kill you. 🐉
