    Sounds yummy Brad! This recipe wasn’t what I expected when I clicked on the thumbnail. I’d probably call these “Buffalo poppers.” When you said “Buffalo white wings,” I thought it was referring to an appetizer that I’ve done in the past which was smoked, then flash fried wings, with spicy Alabama white sauce. (Hint: might be a good recipe to try.)

    what would make these even better would be finishing the smoked ones like ribs with brown sugar, butter and honey and letting them sit in foil. That sweetness with the spicy buffalo flavor and the savory ranch! Delicious!

    Fixing to smoke two turkey breasts tomorrow, slather them in mayonnaise then hit em both with chud rub (shout out to Goldee’s bbq on the collaboration) and feed the whole fam. Everyone’s excited and thanks again for teaching me so much about smoking/bbqing over the years!

    Just a little Central Texas “White Wing” history…There used to be a Mexican food restaurant called Las Casas in Temple, TX right off I-35 that claimed to be the originator of “White Wings.” When they closed, Clem Mikeska’s BBQ across the street took over the “recipe.” I’m sure them being the originator might be a little folk lore but Las Casas was my first ever encounter with “White Wings.” From what I can remember theirs was more of a ball shape and I think they started with uncooked chicken, and then stuffed it with a jalapeño and pepper jack. They did not sauce them and served with ranch dressing.
    This was a great video and awesome looking rendition of white wings!

    I got a good one.
    Shrimp Diablo
    Slice a large shrimp length wise.
    In slice, put a sliver of Jalepeno, or Habenero, along with a slice of cheese (Mozz, Gouda, Asiago, or whatever you like).
    Wrap with a full thin slice of bacon, and pin with toothpicks.
    Season with your favorite poultry or pork type rub. I like Plowboys Yardbird rub.
    Grill

    I just found your channel EPIC STUFF DUDE!!!!! IM A SUB NOW LOL love it i had an idea as this was playing an a trick that was used at a restaurant i worked at freeze the cheese then stuff wrap then fry after a light high heat smoking we used poblano peppers not jalapenos though

    Mr Robinson…have you ever tried using yellow mustard in your Buffalo sauce? I add it to mine and I also add honey to give it a sweet sticky-ness. The mustard really works!!! In my opinion anyway

      No. He uses the burners next to the table and puts the pot on the metal piece so it’s easier to film.

    I make my own buffalo sauce because I always have 4 or 5 different hot sauces on hand and I've always got butter. I really like doing a buffalo sauce with butter + crystal hot sauce + el yucateco red habanero (for some heat)

    Okay...do you heat up one of your trivets to a super hot temp and use that to heat up the sauce or do you have a magic eye right in the middle of that butcher block?

    Mayonnaise as it should be made :)
    4x egg yolk
    1x tablespoon regular vinegar
    1x tablespoon sharp Dion mustard
    1x tablespoon luke water
    4dl of sunflower oil or peanut oil (between 1,5 to 1,75 cup)
    pepper & salt
    You will have no idea what hit you :-) And believe me, we in Belgium are mayo eaters and as they say in Pulp Fiction do we drown our fries in it 😛
    You start with the 4 egg yolks and whisk them. Add the mustard, vinegar and luke water to it and keep whisking.
    When all is nicely whisked start by slowly adding the oil. Very quickly will you see the mayo thickening. Add pepper and salt to your liking.
    Sugar? That is a no go ;-)

    Making these tomorrow for our onesie partah. However, I don't have any presmoked turkey...or any meat for that matter. So I think rotisserie chicken meat will have to due, then smoke as normal to the video. High of 24 degrees with snow in Nebraska tomorrow, lets go!

    Brad, if you’re looking for new ways to utilise your beef tallow, try frying french fries in it in the Belgian style. Thick cut and double fried. Preferably served with Belgian style mayonnaise. Oh, and have a steak bearnause with them while you’re at it. This is a bbq channel after all 😏

    I always make my own buffalo as well. Franks, butter, gochujang, red pepper flakes, and honey. Tastes AMAZING. That said, my point is... The butter actually WONT get hard in the fridge if it's properly blended into the sauce. I always end up making extra and it takes me a couple days to finish the sauce. Have never had an issue with the butter hardening in the sauce.
    Absolute worst case scenario, throw the sauce in the microwave for a few seconds to melt the better if that DOES happen, but... It really shouldn't. (Buffalo sauce is better warm anyway, unless the food is cold.)
    Edit: also probably gonna see about getting some zanthum gum to make it thicker, now. My sauce is 10/10 and way better than any sauce I can just "buy" in my area, only complaint has been that it's too thing. Never considered zanthum gum. Have thought about corn starch, but I'm too lazy to make a slurry lol.

    At what station in the kitchen did they teach you to weld a smoker, cos you chop onions like a chef but I've never seen a chef work metal like that.     A word of advice from one with experience: when choosing a jalapeno pepper, opt for the longer thin ones rather than the shorter, fatter ones. The thinner ones are easier to wrap with the bacon, and will wrap the entire pepper. Just saying.

    I would run the turkey through a food processor. Mix in Buffalo sauce and some smoked gouda. Then stuff and wrap, and grill.
