@@MikhelBL that is incorrect. White meat is the upper body of the chicken, breast wings etc. Dark meat is the thighs and legs. The color of the meat is still "white" I suppose but these are terms to classify what part of the chicken they com from.
For Trevor wondering how Popeyes makes their chicken lol I was an assistant manager there for a year and a half and left this January for school. For our store, they season bone-in chicken in house, tenders come pre-seasoned, and the fillets are pre-season (but they beat them in house). For the flour/batter process, their bone-in chicken goes into their chicken batter, the flour, and then heads into the fryer (around 340 for 12 min). For the tenders, It goes into the flour, chicken batter, back into the flour, and then heads into the fryer (around 340 for 3 min). For their sandwich fillets, it goes into a fillet-specific flour, buttermilk batter, back into the fillet flour, and then heads into the fryer (around 340 for 6 min). Hope this helps, love you guys!

I've watched this video many times and I'm never prepared for how good of a singer Trevor actually is
Did they ever talk about how Josh and Vi dipped their chickens in the Buttermilk first and Trevor and Nicole did not do the initial buttermilk Quick-dredge first. they just tossed the chicken into the flour first thing.
It infuriates me haha😂 do it the same! However, I think they figured it out later on in the series.
Nicole only dipped them in buttermilk on the second batch because you can only double dredge something if you soak it in liquid after the first dredge. They could’ve just used eggs or milk, but I don’t think they did anything wrong.
@@Sniperboy5551 single dredge should still go in whatever the liquid is first. Double should go liquid-dry-liquid- dry.

There's one thing that wasn't tested that I'm really curious about. What about doing single dredge, resting for an hour, then dredging AGAIN right before frying? that way you get the adhesive layer formed, and the flaky layer doesn't get saturated in juice
I do a dredge rest, dredge rest, dredge fry. Also, leave that chicken in the cast iron ALONE until it has a hard scald!

@@Goldi-Luc I do 400. I use an induction burner for my cast iron so that makes it easy to keep the temp steady.

respecting sensory issues and personal space preferences is important, and the mythical crew really shows a lot of compassion for many things
I will only say one thing, the fact that they did not test all 56 possible combinations to find a definitive number one is criminal

What I got from this episode is that Trevor has a really good voice

I’m so mad at this video for one reason. When Nicole and Trevor were testing single or double dredge for the single dredge Nicole just dipped it in flour. But for double dredge they dipped in buttermilk and flour twice. Missing the buttermilk on the single dredge ruined the test! I still love y’all though and watch every video!

They need the butter milk dip for the double dredge to make the flour stick to it. The first one the chicken is already wet and doesn't need more moisture to have the flour stick to it

Love the episode, but the 2 groups didn't double-dredge the same way. One did buttermilk/flour/buttermilk/flour, the other did flour/buttermilk/flour.

Funny thing is during the brine experiment they coincidently did use all the "wrong" methods (buttermilk brine, single dredge, no rest, deep fry)

A simple fix for the lack of flakiness on the "Hour Rest" portion, is to coat the rested chicken once more in flour after the hour is up.

Josh!! THIS is the type of content we want! I think you're hilarious, always have, but I have limited time and only watch things that are both amusing/fun AND informative. I absolutely LOVED your "eat food good" series for this reason. This type of method comparison is even better - it's exactly what I want to see, seriously!! Pleeeeease do more like this; no offense, but I'm not going to recreate some Taco Bell or McDonald's discontinued item at home, or create some crazy hybrid. I want stuff that helps me actually cook better while being entertaining. After all, there is still most of a gap to fill where BA used to be... ;)

Was not expecting the reference and it made the episode so much better for me personally cuz its my fav show.
I just wanna say I grew up eating pan fried chicken, which was amazing. Because of the fact you get those nice little crispy bits in the bottom of the pan and they help flavor the milk gravy, We always had yellow rice with fried chicken, so milk gravy was very common. But honestly, as long as it's well seasoned, not overcooked, but not soggy either, and of course super moist, I'll eat it fried either way. Great job btw, all yall working together in this video worked, would love to see more like this.

That whole bit about Tony C's really hit home for me. I use that stuff a lot, and not only will it choke me up every time I forget to hold my breath, my wife will start sneezing all the way in the living room about a minute later. If the Germans had Tony C's in WWI, they would have won.
