I'm in Bellingham WA and we see alot of rain as well, and I've had my eye on an alucab for sometime now. Putting everything away wet and not having a place to dry it out scares me.
There are several configurations you can go with. I have a jet boil and propane stove for most of my cooking. If I was to do it again, I would buy an Expendiction Essentials combo cooktop and drop-down shelf. That was not an option when I built mine out.
It did great. I did prop my devos light pole under to help water runoff a certain section. I plan on keeping pool noodle in my setup. You can use small pieces to create space under the awning and support frame to allow water to flow better.

@ToadMan9000 we have camped in it a lot in the rainforest without issues. If it's wet, we just want for a dry day at home before popping it up.

How did the Shadow Awning hold up. Did you have to poke it to get the water off it? Did you have it open during the night?
