Ingredients:
(makes 12 muffins)
- 2 bananas, approximately 250-300 g
- 100 g vegan butter
- 60 g sugar
- 250 g vegan yogurt
- 1 tbsp apple cider vinegar
- 240 - 300 g flour (adjust based on the consistency of the batter)
- 2 tsp baking powder
- 1 tsp baking soda
- 1-2 tsp vanilla paste
- small pinch of salt
- 2 tsp cinnamon
For the streusel:
- 45 g vegan butter
- 35 g sugar
- 70 g flour
Bake the muffins in a preheated oven on the middle rack at 175°C for 30-35 minutes.
