  • This incredibly easy vinegar recipe is one of our favourite ways to preserve this abundant spring flower, which is at its prime at the moment and should be available until the end of June 🤞🏻.
Make up a few bottles batch and it can be enjoyed year-round until the next season arrives. The vinegar is great for pickling (we will be pickling a batch of our wild garlic seed capers in this!) and salad dressings 👌🏼.
To make, pick 3-4 handfuls of elderflower blossom, removing as much of the green stem as possible (it’s a bit bitter) 🌸.
Be sure not to wash the blossom, as you’ll remove all the flavour. Submerge the blossom in 750ml cider or white wine vinegar in a sterilised jar or bottle for 2-3 weeks ⏰.
Strain through a Muslim or clean tea towel, and store in sterilised bottles 👌🏼.
In this video, we also give a few tips on how to identify elderflower - as many of you got in contact following our last Elderflower recipe a little cautious of what to pick. NEVER pick anything you are not 100% confident you can identify 🙅🏻‍♀️.

If your lemons aren’t organic you should remove the wax before zesting
Looks like you do lots of bottling I’d invest in an auto syphon and bottling wand. Especially if you make wine/beer etc
