I made this last night after watching this video and realizing just how easy it was to make, and I was so impressed! I have never had such a flaky, buttery, sweet and equally easy to put together crust in my life! It took minutes to make, and I actually popped it in the freezer for about 20 minutes just for it to get slightly cold on the edges because that helps it cook better in the oven. The curd was sharp and sweet, very smooth and easy to whip up, and the presentation at the end was effortlessly beautiful. Thank you so so much, will be making again!

WOW I am so happy I made it without any problems (well one little one i forgot to prick the pastry to stop it from bubbling but other than that nothing). I followed a recipe that said juice from 6 lemons....now that is a total lottery and we know they differ in size etc a lot. I think your butter in the lemon filling would make it a lot richer, and I fully intend to try it. Great Video!
I don't like sour, so I'm using 75 ml lemon juice + 50 ml water. It tastes perfectly fresh sweet-sour and fruity. But not too sour. Thanks for the recipe. It's simple but delicious. And you are so beautiful ❤

This was super-easy to make, thanks! My family likes super-tart lemon pies, so I doubled the lemon ingredients and reduced the water accordingly. It's really pretty, and I could eat the whole bowl of filling with a spoon if I didn't have a pie to fill.

Im making this now with a low carb twist.im using an almond crust and use Erythritol as sweetener for rhe crust and the filling. Cannot do away with caster sugar though for the meringue as is my first time making it.wish me luck!🤞 thanks for the recipe!

I made this but changed the recipe a bit, i substituted the lemon juice and rind for orange juice and rind, and made the base with crushed hobnob biscuits and some cinnamina and butter to bind it, and poured melted milk chocolate over the base and put in fridge to set it. Then poured the orange mixture into the base and sprinkled shavings of milk chocolate over the top. (no meringue)...yummie yummie in my tummie :)
InTheKitchenWithKate I intended to use gingernut biscuits but the shop did not have any so had to use hobnobs which i did not know had chocolate in them. Also i suppose you could use any kind of fruit juice instead of lemon, just a thought that just came to me whilst typing this.
