I tried it and turned out with no cracks or didn't sink! Perfect texture and flavor. I previously tried a mini cheesecake recipe twice, and it cracked and sank. These turned out with a flat surface and no sinking. I highly recommend but here are some tips - use a good brand for cream cheese. I used Philadelphia cream cheese - you can mix with your hand instead of hand mixer -soften cold cream cheese by putting it in hot, not boiling water (unwrapped) for about 15 to 20 minutes and change the water and flip the block of cream cheese every now and then. -same can be done with cold eggs. Put it warm water until not cold anymore. Good luck!

I MADE THESE!!! They tasted amazing & were perfect little sizes. More of a heavy cheese cake, (not fluffy) but maybe I over mixed. 1) Make extra crust, b/c I found it was too thin & I had extra batter so ended up with 18 instead of 12 cupcakes 2) Leave in the stove after u turn it off for 10-ish minutes. Then room temp for 20 min before you put in the fridge 3) I added 1/4 cup of Bailey’s Irish Cream 4) I added some melted Chocolate on top as a swirl for design.

I think I added more cookies than butter the first time around so my crust was little more crumble/powdery like texture, but the second time around I added more butter and it was the perfect brown color! I also added a little bit of uncooked rice underneath each cupcake wrapper to absorb moisture. I always come back to this video for the perfect mini cheesecakes bites!

I made them for 2 events and they garnered compliments. easy to make and the recipe was very precise! which is quite rare these days. the filling and base were in good proportions, no extra to any direction. For toppings I used some colorful fruits. it was a real eye candy. yellow mango, green melon, purple plum and and an orange. for some cakes I used just one fruit, for others I arranged assorted mini-cubes. everyone enjoyed!

Used this recipe for my baked biscoff cheesecake since i love my cheesecake baked more than chill😂 reduced the sugar by 20g since biscoff is too sweet to my liking. Just changed digestive biscuits to biscoff and then poured biscoff spread on top of the cheesecake once it was chilled for 1hr. Also i ran out of large eggs so i used 2 small eggs and increased my sour cream to almost 200g. Yield 14 mini cheesecake and it's so creamy and delicious

I made these today and they were delicious! Perfect flavor and not overly sweet! Although, even with a decent amount of crust I still had a lot of graham crackers left over, so I would say I used only about 120 g of graham crackers.

I finished making the ingredients and filled my reusable silicone cupcake holders! Waiting for the oven to warm up to 320 which my oven doesn’t take that long to do and will be baking!! Super excited about this recipe!!
I used 2. The recipe calls for 10.5 oz so it would be an 8 oz package of cream cheese, then in the next package just 2.5 left of cream cheese. On the package it should say the oz on there of where to cut on for the second package. Sorry cream cheese is expensive!!

@CHAN WAI HONG Moe I have an electric oven with heating element both up and down but they are on auto function. While baking only the lower one heats up. So if you can control your heating use only the lower one.

Havent ever tried adding flour in a cheesecake mix.. I guess it stabilizes things in ths mixture when baking.. well.. here goes.. trying it tonight.. will let y'all know how it goes..
