    Hi Hedyeh, Thank you so much for this recipe. I have been looking for a Iranian Feta recipe for quite a long time and I am glad you shared your video. I had to modify the quantity a little as I used 1800g of milk and 80 g of greek yogurt. Therefore I changed to 1/4 cup of cider vinegar and 1/2 lemon. it is resting now. I see you keep it after in the brine in the fridge. Do you think I could keep it in oil (half olive and half colza) ? with herbs ?

    Hey its almost like paneer.... But 1 Q.... How to store it.. Means shall we store it with the liquid only in the fridge? Means the cheese will remain immersed in that salty water in the fridge till it is all used up? Or shall we discard the water...?

    • @hedyehskitchen7559
      @hedyehskitchen7559  3 года назад +2

      I have heard that it is also like paneer. This recipe was introduced to me by my mom and her cousins, we are from north of Iran, Gorgan, I believe the cheese Paneer you're referring to is Indian, however Cheese in farsi is called Paneer! and more salt you put in it more time you can store it and yes it has to be in the salty water the whole time. I usually keep it for 1 week to 10 days! you'll notice it's going bad when it start getting smelly! I hope that answered all your questions, Thank you!

    Another question would be how long to let it sit in the brine to see the benefit of the salt?

    Do you use all the liquid for storage please? or do you have any left over and if so, can you use it as liquid for bread making? In Ireland we use the leftover milk from butter making (buttermilk) for making wheaten bread, which looks very like the bread in your video. Thanks so much for your video xxx

      Thanks for watching! 🙏 ❤️ Yes there will be left over liquid, I don't know about bread but my aunt told me to use it when making rice and that's what I've been using the left over liquid for! Sorry I can't be helpful with the bread. Let me know if you do make it and if it works! 😊

    Couple quick questions please as I'm going to try this out.
    1- how long does it take for the cheese to gain that typical feta salty flavor all threw the cheese in the salty brine?
    2- how long once it's all completed is this healthy in the frodge?

    • @hedyehskitchen7559
      @hedyehskitchen7559  10 месяцев назад

      Thanks for watching! 🙏 ❤️ I didn't put much salt in it because I don't like it that salty but more salt added to the liquid, longer you can store it for. I use up to 7-10 days. and I would say leave it in the salt water in the fridge for at least 6 hours to soak all that salt water. I have never added salt while boiling, maybe that could be a thing too if you want it very salty! Sorry hope that was helpful. 😊

    Can i make creamy feta dressing for my salad with it??

      @hedyehskitchen7559  Год назад

      Hi There, sorry I don't know the answer to that but I do put it on my salad. To make it creamier I can suggest not to wrap it very hard so the cheese could be a bit looser.

    What is the purpose of the yoghurt as it seems it doesnt sit long enough for the bacteria to do anything.

      That you for your honest comment! I usually make it at night and wake up in the morning then put it in the fridge to cool and that's about 8 to 12 hours, I believe that's the right amount of time and at the end it taste %100 like pure plain yogurt!! How long you say it needs to be?

    • @hedyehskitchen7559
      @hedyehskitchen7559  Год назад

      LOL, because I had to adjust my camera higher so that my phone wouldn't heat up and die in the middle of my taping and I frequently had to climb the chair, put my foot on the counter for stability and check if my phone was still recording and somehow I forgot to cut that out! This was the third time taping the video due to phone heat up! I'm learning haha and thanks for watching!

    Hi . Thank you for the recipe. It is awesome!! I just have a question. Can this recipe be used to make Bulgarian feta cheese also? Do you know what is the difference between Persian and Bulgarian feta cheese? Thank you.

      Thanks for watching! 🙏 ❤️ I am not familiar with Bulgarian Feta Cheese but I googled and the different is something about butter milk, Bulgarian yogurt, Rennet Salt and Calcium Chloride, I don't know how it will turn out with those added, but I'm sure mine is similar and just very simple! Sorry I can't be in more help! 😊

    Can i avoid apple cider and only use the lemon

    • @hedyehskitchen7559
      @hedyehskitchen7559  2 года назад

      I have never done it without but you should be able to. Try with less milk first and if it works then do with the actual amount of milk but have triple squeezed lemon on the side and use as necessary until the milk breaks and gets to how it looks like cheese.

      LOL no! Reason for the foot because I had to adjust my camera higher so that my phone wouldn't heat up and die in the middle of my taping and I frequently had to climb the chair, put my foot on the counter for stability and check if my phone was still recording and somehow I forgot to cut that out!
