I tried shifting my eating habits a few times in my early 20s but always found it challenging because I craved the rich, flavorful dishes I grew up with. When I started focusing on Mediterranean cuisine, I discovered its perfect balance of fresh ingredients, bold spices, and hearty dishes. This culinary tradition celebrates flavor, creativity, and the joy of sharing meals. That said, sometimes I simply enjoy cooking and baking without following any recipe, I just grab the ingredients and create something from the heart. That is not real feta real feta you need to use rennet, I use vegeterain rennet but animal rennet is best, it is just I am vegeterain. I use citric acid I heat my milk to 32 degrees which is very important when using rennet insted of putting vinger and lemon in. The traddditonl recipe uses sheep's uses sheep milk and you short cut it with the yorgut and then you need to drain your curds for 1 hour, then you need to shape it into small bits and then salt it every few hours for 16 hours, then you need to keep it in the fridge for 3 days minuim but 5 days recommended.

YOU CAN NOT MAKE CHEESE WITHOUT RENNET.
I've made cheese with vinegar, the rennet is not necessary. The milk separates with lemon juice or vinegar. It's just a slightly different taste

Apple cidet vinegar??? Yogurt? ....skip all that ,full fat milk ,white vinegar ,no lemon. In my country apple cider vinegar is 3 times more than cost of fetacheese, in fact ,the yogurt,apple cider vinegat and milk , cost can buy about 4-5 feta cheese

This is NOT feta cheese. It is paneer. Lovely cheese, but feta is made at low temperature, coagulated with rennet, not acid.
