Nice recipe. My Guyanese mother, grandmother and aunts never ever used ginger in their recipe. The Jamaicans love ginger in the sorrel but I've found that the less ginger you use in the sorrel helps to maintain the beautiful flavor of sorrel.

It doesn't matter to me whether it's fresh or dried, just as long it is sorrel - one of my favourites. I will be making mine soon. You may have to make some more for the holidays, because I might just stop by lol.
I make sorrel very often like every 2 mths and use the dry one here in Miami. And what I found is, the dry one has lots of sand, and has to be wash with lots of water. I was so shocked to find a piece of broken bottle also in the sorrel packet which came from Jamaica. In Trinidad we always used the fresh one which we grew,
