Question: the mascarpone cream doesn't need to be "cooked" over a double-boiler? I've seen others cook it. I want to make this dessert for the first time, but I'm unsure about which recipe to follow. Yours looks easier.
TIP: whip egg whites first and make sure there is not a SPECK OF EGG YOLK or the whole thing will not work. Make sure it is a clean clean bowl, any egg yolk or fat will cause your egg whites to never even foam up. I did this with 5 egg whites and it stayed looking clear and liquid the whole time.
I’ve never tried it, but you could try swapping out the mascarpone for a high quality cream cheese and a little bit of cream-for this recipe I’d do 12 ounces cream cheese and 1/4 cup cream! You’ll want to mix the cream cheese and cream together to fully combine before adding in as directed. Mascarpone is such a key ingredient in tiramisu that switching it out would change the taste and texture so just be aware of that!
You can omit the rum if you don’t want boozy tiramisu! I’d just add some extra vanilla extract (I’d do 1 teaspoon) to the coffee to give it some flavor and up the amount of vanilla in the mascarpone mixture to 2 teaspoons!

mascarpone cream doesn't need to be cooked. Its the raw eggs you're probably seeing being "cooked". Mascarpone cream is just cheese already curdled.
