I have a similar recipe from an old cookbook I found in a charity shop: Five Roses Cookbook by Lake of the Woods Milling Company, Canada, 1915. 2 cups hot mashed potatoes 2 cups sugar 1 cup milk 2 Tbsp sweet butter 5 tsp (level ) baking powder 1 tsp vanilla Five Roses flour to make soft dough Mix usual. Roll out 1/2 inch thick. Fry in hot grease. Made these for my kids school bake sale ... They Were HIT! Doughnuts are really soft and fluffy . I will try yours next!
My mom, along with a lady from church used to make these every week to sell to the mill to pay the church bills when I was a boy. They made maple bars from the same recipe too and they were really good.

You may use a cup of leftover mashed potatoes if they are just mashed potaoes and have no Seasonings like Garlic mixed in them.
