Hi Stephanie! I just started watching your videos and I enjoy them so much, I subscribed to your site!!! I have a few helpful tips I would like to share with you when making homemade marshmallows. Hope you find them useful!! First, when I am ready to pour the marshmallow into my pan, I lightly spray my silicone spatula and recessed spatula with non-stick spray. This will help release the marshmallow from the bowl and the spatula. Second, when I want to make colored and flavored marshmallows for an occasion like Valentine's Day, I use red food coloring and strawberry extract. Instead of using powdered sugar, I use the same food coloring and mix it with granulated sugar. Spray the inside of your pan with non-stick spray, and then dust with the colored sugar. Sprinkle colored sugar on top. Roll cut marshmallow squares in the same sugar after cutting them, or use cookie cutters to make shapes. It's like having homemade "Peeps". Delicious!!! Hope you get to try them.

Thank you for the clean up suggestions & for the conversions as I live in Canada and we use metric. My Grandma used a small amount of oil (unflavoured) to brush the knife with to cut. That helped with slicing and I didn't notice any added flavour. Thanks again!

My mother made these when I was a child. I have a very poor instructions for this recipe, so grateful I found your recipe. Turned out beautifully. As a girl my mother rolled the marshmellows in very finely chopped nuts and they were excellent this way. Also, I put a little bit of peppermint flavoring and red food coloring.
So good I'm on my 2nd batch this week...this time I tried the juice and zest of a lemon plus enough water to get 1/2 cup for the gelatin and 1/2 cup of water for the sugar...same amount of vanilla...can't wait for them to set...the bowl tasted like a Lemon Meringue Pie...might make a good white chocolate s'more...
I made these a few years ago and they were AMAZING! Everyone who tried one said they tasted great and they were even better than the ones you buy from the store! Thanks so much for the recipe!

My marshmallows are "drying" as I'm typing! They were so easy to make! At the end I would pour a cup or two of Rice Krispies in the bowl to clean it! Hot water in a bowl or even boiling would be good to set the bowl in to keep the mixture workable until you are finished. I think a cup of boiling water to dip the knife in often would keep it workable also.

Are you saying they were still sticky after letting them sit for 12 hours? Did you cover the surface of the marshmallow with a layer of powdered sugar?
The setting time will depend, but normally 8-12 hours. I like to use a saucepan with a heavy bottom so the sugar syrup doesn't burn. There isn't much you can do about the smell of gelatine.
Probably needed more mixing...I know kitchen aid is supposed to be the best stand mixers but is there a cheaper one that gets the job done right? It was also during the holidays so a lot going on. Thank you so much for answering my questions!! You're brilliant in the kitchen and with baking!!

I love this recipe. I tried it for the first time tonight, and it worked perfectly. Also, I used the water and it spread out perfectly. I did kitchen spray my silicone spatula when scraping my mixing bowl, then just water on my fingertips to spread it out. thank you for all of your tutorials. :o) Traci A. Ohren
If you grease your utensils or hands with vegetable shortening it makes it a lot easier to work with marshmallow and it wont discolour them like butter does.

we tried a different recipe and just pulled them out of the mixer... didn't realize just how sticky they would be... but good gracious... they are the most amazing things ever!! We are making another batch as well that we are wanting to color red. :) Red and white marshmallows :D
Wonder if after you dust with powdered sugar you could put a wax paper on top cut to fit to push it into place? Or use cooking spray on your hands and spatula so they don't goo up? Thanks for the video, I wondered how to make them at home.

Quick tip: A large bowl scaper dipped in cold water (you might want to dip your fingertips as well) gets out all the marshmallow creme out in one to three goes! Easier clean up as well.
How about using some kind of nonstick spray or an oil on your spatula to scrape the marshmallow out of your bowl and to spread it evenly in the pan. Just makes it so much more easy any less messy.
make your fudge while this is whipping, then when you pour the marshmellow into the pan add the fudge to the bowl and incorporate the unused marshmellow. Adds great taste to the fudge, doesn{t interfer with it{s setting process, and it is fun to experiment

It is a Casa induction burner. I bought it at Williams Sonoma when they had a sale a few years ago. I don't think they carry the same one anymore.

It could be that the marshmallow needed to be mixed longer. Or if the humidity is high, that will also cause them to be sticky.

No, you can use sheet gelatine. I use powdered gelatine just because it's easy to find where I live.

I never actually tried using honey, but I have read that you can use it in making marshmallows.

As long as it registers the temperature you need.
try to make the sugar syrup with less water, and cook to hard ball stage. that might help. also make sure to coat with powder sugar and corn starch
