Again the Perima team has reminded us of who we truly are via wholesome cuisine. I have watched this clip about 20 times and i must admit to mentally salivating, such is the Solinas depth and understanding of our ancestral cooking secrets. Rasso is unique, truly an aquired taste but one that grows on you rapidly, dont be fooled by its modesty, , this is a truly complex and unique dish in execution. This rustic dish hastily smothers you into a sarcophagus of differentiating textures and favours leaving different yet joyful flavours on the pallet. Solina is correct in saying that this dish is easily modified, however she has presented us with the foundation and groundwork to explore and navigate. Dhall, onions etc add extra textures and depth making this dish thicker and more complex however, the underlying DNA to this dish is beautifully presented by Solina. Rasso in Colombo Sri Lanka compared to South Africa share one common gene, tumeric and the undeniable taste of tamarind. If one had to reconcile the diversity of ingredients and spices in this dish, it would be difficult in accepting the final product until the first spoonful explodes with deliciousness in your mouth, this is the WOW factor. Make a visual judgement to this dish at your own peril, once tasted it would transform and convert the novice palate into a deeper, more soulful acceptance of yet again...fine dining. Show me a Continental Michelin Star chef that can give you such delicious yet soulful complexity in a bowl and I will gladly eat my words, Solina has yet again enveloped us with a classic, thank you to a great cook...

Its like a writer with brain fog, you sit there trying to make culinary sense of this cooking adventure whilst making every attempt at hiding your drool...do this, place yourself in a seat of a roller coaster, the beginning is absorbing, fresh air thru ur hair, u relaxed, its a pleasant ride for a few seconds.. and then, you are sent mesmerized into a labyrinth of curves and twists until the grand finale...this is very much like Solinas cooking according to me, its that gripping "heart of the dish", the middle of the journey, that grips me..I know that intended outcome however, it is as I said...intended, then she throws a curve ball, a "hot tip" or something Agatha Christie like, there has to be a curveball..her cooking takes me to a happy place, like my late Ma's, my Nani...that smell when you walked thru the door, that in your face, salivating smack once you open that door..cooking isnt science, many make it seem like a scientific experiment, I differ...its an art, Sol is an artist, neither a chef nor a cook...an artist, forget the Lisa in Mona or the abstract in Picasso, this is food coming alive, the birth of generational classics handed down from mother to daughter and so on..I am firm in my belief in truly South African cooking methods and I can defend this with ferocity, the Indian Sub Continent has nothing on our cooking methods, the closest I have experienced was Kerelan cuisine however close but no cigar...to be a child and recipient of such cooking greatness is a gift, food isnt food if not appreciated for its beginning, its birth, its creation...South African Indian cooking is rooted in its history, it is grounded in its mysticism..one has to be born into this culture to appreciate our cuisine for what it really is...Sol is a true ambassador, a stalwart in this sense, the likeness of her cooking to my mums and my grans is scary hence..I identify with her mastercraft with ease...

My luck I got hit with the flu virus, as if I dont have enough on my plate post Covid. Anyway I plucked up the strength and made rasso following this recipe as I just about had it with chemicals which I need to feed my body 3 times a day, the likes of 25 tablets at one sitting would make anybody cringe. Nonetheless, the end product was out of this world, my chest is aching like hell and the rasso offered me instant relief. I am going to down more in an attempt to break this agonising fever.
