You are 100% correct. I mix my merangue right before I start cooking my filling. I pour the filling in the crust and immediately put the merangue on the filling. I never have any weeping. It took me years to finally figure it out but it always works.
My mouth was watering so bad! Coconut is my favorite then come Pineapple! I don't know but sometimes Pineapple wins first place! Lol. I absolutely love Coconut Cream Pie! My mama would make a pineapple puddin n put Vanilla Wafer in it just like her Banana Puddin and I ate it til I got sick when I was a kid! There was nobody that could bake or cook like mama did! Lol. She had magic fingers! She worked her Magic in everything she made n it didn't matter what she cooked or baked! She worked for the county years n years ago in the middle school cafeteria! She worked for years there and they'd say you can't add this or put that in the food bc of kids or adults allergies! Mama went to work and sent out forms to all parents n teachers n staff to find out their allergies! Then she'd cook n bake accordingly! Yes Tammy, Mama worked her magic at the school and all the kids loved to eat lunch! They begged her to start working at the high school...lol When there Holidays would roll around, Mama cooked the Best Tasting Turkey Dinner that the school had ever had! Everybody praised her on her food! She taught the others working there, How to Cook and make it so no kids had allergies to anything! The homemade Pizza was to die for! She'd show the workers how to put this n that to supplement this! She won the Cafeteria Awards Every Year but gave credit to all the Workers! Kids are picky about school food but no child complained and the middle school in Gwinnett Co school system praised my mom and she went as high as she could go n that was it! They kept giving Awards n raises! Some kids wanted mama to come teach their mamas how to cook certain foods! Lol. They ate foods at school they never ate at home! Yes, my Mama had Magic Fingers Tammy! Lol. Just like yours did! Lol. God Bless ya Honey! 🙏💖💪🇺🇸😀
I specifically looked up your coconut pie recipe, I’ve used a few times- excellent. Respectfully, your top coconut burns because you’ve pre-toasted what is garnished on top and rebaked. If you use un-toasted on top, they won’t burn. Of course, you will toast what you use inside the coconut cream filling. Just my experience in 67 years of cooking - I’m 73.
Girl I'm with you, using the microwave is so much better. When I was a kid my mom would have me standing over the stove stirring, but those pies were great in the end...lol I'm anxious for the holidays, if I make one before I'll be the one eating it all 😁

this really is the best coconut cream pie recipe i've ever tried. the only thing i changed, instead of meringue, i topped it with homemade whipped cream and of course i added the toasted coconut flakes to it. my husband doesn't like meringue so that is why i made it that way. it was delicious!
I absolutely love Coconut Pie (my very favorite)!!!!! My mother always made one for me for my birthday, as she made an absolutely wonderful world famous Coconut Pie! I love the toasted coconut in the filling, but I might recommend not using toasted coconut on top of the meringue, but rather use untoasted coconut since the meringue needs to cook for 20 minutes, the baking time should not cause the coconut to get overly done and be perfectly golden like the meringue. That's how my Mom made her Coconut pie meringue. Just sharing, and food for thought. Love your show and the way you explain your processes. Keep those wonderful videos and recipes coming. Look delicious. A Diner years ago made the Best cream pies. Each had a layer of pudding custard on bottom the rest was mixed with pudding custard and fresh whipped cream then topped with toasted coconut,chrunchies for banana cream and jimmies with chocholate...
I decorate cakes. And I had always hated meringue because the uncooked egg whites. But after decorating cakes I came across a buttercream recipe that used egg whites (swiss buttercream). So my point of saying this is instead of cooking the meringue quiet that long in the oven you can use a step of the swiss meringue buttercream and make it a little easier. Take your egg whites and granulated sugar and cook over a double boiler until they reach 140-160 degrees and then whip up. Its cooked and ready for eating.. Just thought someone might be interested. Thanks for the recipe. This is my favorite cream pie.
Look up Never Fail Meringue. You cook the sugar with a little cornstarch and water and add that to the beaten egg whites. Mine used to weep a lot, but since I've gone to this method, it rarely weeps.

For people with allergies who wat to avoid sulfites (in most dried sweetened coconut), frozen coconut is usually available in supermarkets, and dried unsulfited (usually unsweetened) is available in some larger stores (like Walmart), some grocery stores and almost always health food store or in bulk online.

My mom's favorite pie is coconut cream with meringue, but it's just us and I don't eat sweets. I am just the cook. I got the courage to make it, but suffered weeping by the next day and it ruined the crust. My mom told me she really could care less about crust so I started a new system. I make the pie filling and simply store it in a Tupperware. Then I make the meringue topping right in a pie pan that I preheat in the oven. I store the cooked meringue in the pie pan (it has a fitted lid) and I make the toasted coconut on the side. So I literally serve her a bowl of filling with a slice of meringue and she can top with crunchy toasted coconut. It's crazy yes, but I don't have to make crust and no more weeping. She has "pie" for days. I do use coconut milk for my filling and coconut extract as well, but those were all requests of my mom considering I have never eaten it. I just thought I would share my goofy solution to weeping meringue LOL
Hi Tammy! This is my dad's very fav pie! I made a double recipe but used store-bought tart shells to make small individual servings for a ladies meeting at church & to share with neighbors. Easy recipe to make, delicious & as always...my crew leaves no leftovers! Thanks for another video, y'all !
Hated coconut when I was real young. Love it today. I’m thinking maybe sprinkling some coconut that’s not been toasted on top since it could burn during the baking of the meringue. That way it could toast in that oven time and not burn. This looks so delish! I also like the Pillsbury rolled pie crusts too. I’m getting ready to make some chicken pot pies with the refrigerated pie crusts. 😀

Love your recipe. Just want to add that a spoon used to swirl the meringue and pick up often to form small peaks might be easier for you.
