It's weirdly satisfying for Edward to receive recognition and respect from both the Templars and Assassins. It shows how much he really changed. Despite all the odds Edward emerged as a good man with a cause and a code he was willing to follow. And to me it seems Torres was grateful that his death was caused by a man of conviction (even if Torres disagreed with him) instead of a money obsessed parasite. It means that even though Torres didn't agree with the Assassins, his death meant something.

To be fair, Haytham was taken as a child and brainwashed by the Templars. Years of their teachings and adoctrinated by their ideology, he didn't actually got a choice. In a way, I think Edward would have been proud of Haytham, just as Haytham was in a way proud of Connor when he killed him. I'm sure he would have seen the great qualities of the man his son became.
It's interesting to see how each character spends thier last moments. Some are defiant, some are disbelieving, others give Edward respect as an opponent.
