Turkey Tetrazzini

  • This turned out to be an AMAZING recipe - I encourage you to give it a try. It is called Turkey Tetrazzini - basically it is a Casserole made with leftover Turkey. I first heard about this dish on a recent episode of "Beat Bobby Flay."
    Here is the recipe list:
    1 1/2 pounds Thin Spaghetti (broken in half)
    4 Tbsp Butter
    2 Cloves Garlic (Finely Chopped or Minced)
    1 pound Mushrooms - Quartered
    1/2 tsp Salt (more to taste)
    1/2 Cup Olive Oil
    1/3 Cup Flour
    4 Cups Chicken Broth (more if necessary)
    1 - 8 Ounce pack of Cream Cheese
    3 Cups Leftover Turkey
    1 1/2 Cup Frozen Peas
    4 Slices Bacon - Fried and cut into pieces
    1 Cup Grated Monterey Jack Cheese
    1 Cup Grated Parmesan Cheese
    Black Pepper - To taste
    1 Cup Panko Breadcrumbs
    Cook the Pasta until not quite done, or Al Dente according to package instructions. Drain, Rinse, and set aside.
    Preheat Oven to 350 degrees.
    In a Large Pot, heat the Butter over Medium-High heat. Add the Garlic and sauté for a couple of minutes. Add the Mushrooms and Salt, and sauté for a couple more minutes. Pour in the Olive Oil and allow it to cook with the mushrooms for several minutes.
    Sprinkle in the flour, then stir the Mushrooms for a minute. Then, pour in the Chicken Broth, cooking for a few more minutes as the mixture thickens slightly.
    Reduce the heat to Medium-Low. Cut the Cream Cheese into pieces so it melts quicker and add to the pot. Stir it until the cheese is mostly melted. Then, add in the Turkey, Peas, Bacon, and other 2 Cheeses - adding Salt and Pepper to taste.
    Add the Cooked Spaghetti to the mixture and stir to combine. Add any more Chicken Broth, if needed. If it is a little "soupy" - that's ok - it will thicken some in the oven.
    Pour the combined mixture into a large Baking Dish (Larger than a 13 x 9). Sprinkle the Panko Bread Crumbs evenly over the top, and bake for 20 Minutes. Let cool for 15 minutes, and enjoy.
