Those enchilada sweet potatoes look great! Will definitely try! I like to use sweet potatoes for morning breakfast boats so this is a great option for dinner. Quick tip if you are pressed for time and can't bake them to soften them before baking them....puncture them with a fork and microwave for about 7 min. 👍🏻 Then you can scoop out the inside and continue. ❤️
Hey Whitney! Love you so much! A quick tip that my bf's Mom taught me is rub or spray the outside of the potatoes with olive oil and then wrap them in foil, loosely. Every single time they are PERFECTION!!!!!

I just made the enchilada stuffed sweet potato 🔥🔥🔥 I microwaved the potatoes for 5 minotos before popping them in the oven and that worked great. I also added 2 servings of cooked ground turkey to the enchilada filling, so yummy. Love you and your videos Whit! ❤️

I am SHOOK I feel like ur meal prepping twin right now, I also make the breakfast tacos I add black and kidney beans to mine as well for some more protein and with my zuchinni noodles I cook it with black and kidney beans sometimes if i have no chicken meat balls and add a little bit of tomato sauce or pesto and its DEEELISH so excited to try the sweet potatoes
Hey! :) So if I may...I love sweet potatoes but they take a long time to cook as you mentioned...A life hack is to actually poke the holes in it as you did, then cover it with damp paper towels and put it in a microwave for 5 minutes for a medium one, and depending on your microwave's power...I do 5 mins on high...It's so simple and really good and easy to peel! Make sure to let it stand for 1 min once done though cause it will be super hot

We have a microwave but some days it's just too busy so I have cold lunches and rice/grain bowls like from freshii or green rebel with veggies, beans, meat if you eat them and sauce/dressings are my fav. My favourites are mexican/taco style and Korean ones
