Butternut Squash Soup with Bacon, Sherry and Thyme

  • This soup counts as a main course, although I sometimes serve it as the first course at autumn dinner parties. Thank you for watching! Ingredients are listed below:
    Butternut Squash Soup with Bacon, Sherry and Thyme
    Ingredients for about 4 quarts of soup
    3 1/2 to 4 pound butternut squash
    Olive oil
    7-8 slices bacon
    2 large onions
    1 teaspoon kosher salt and grinds of black pepper
    1 teaspoon dried thyme leaves (triple the amount for fresh leaves)
    5 cups low-sodium chicken stock or broth
    1/2 cup (or more, to taste) medium-dry sherry
    1/3 cup (or more, to taste) heavy cream
    Suggested garnish: croutons or a mixture of crumbled bacon and fresh thyme leaves

    Kevin, i have to thank you for putting this up. I have been making butternut squash soup for years, but, this year, couldn't find my recipe, so i looked at your recipes, and found you had posted one . So i made it, then made a 2nd batch, and gave some to each neighbor that on either side of me, they said "thank you for the delectable soup, thank you to the Chef. Well that is you! thank you Kevin!! for posting. i am putting this into my recipes under "soup favorites" .

    Wow this looks very tasty. Don't think it would be around here for 5 days! I've made a lot of butternut squash soup but never added bacon or sherry, can't wait to try it with those additions. Another wonderful garnish for this soup is pumpkin seeds. Thank you Kevin!

    Thanks again Kevin for another wonderful recipe. I cook one day a week for a neighbor couple not cooking anymore for themselves and they requested a warming winter soup. This really was it, they raved about the flavor and texture. I made a focaccia bread to serve with it. Your's of course and it was also delightful.

    Wonderful.....
    I just bought all ingredients for your carrot/orange/ginger-soup...AGAIN.. because I love it so much but this one I definately will also make I also foward it to my middle-son( The hobby-cook-filltime-doc in USA-who loves to vook with his fiancée) and to may collegue from theater-who the above soup veey much.

    I first tasted this at a place called Pickety Place here in New Hampshire, then again at a craft fair. I have been looking for this recipe that comes close to what I remember it tasting like. Thank you so much for this video!! I love this soup as it starts going into fall and the colder months.

    I cannot help myself when it comes to butternut soup I make this at least 4/5 x a year that way I always have a stock in the freezer 🤤🇿🇦

    Love the way you present the soup. It looks delicious and thanks for the recipe. So glad your butternut squash thrived this year so you can use it all winter in healthy meals. I bet in that big old house you can find the perfect place for storage. Those cattle fence trellises sure did the trick, that video was the best.

    The soup looks wonderful. I'd certainly enjoy a cup right now. I'm surprised it is such cool weather here in the South, but we've managed to get right into the spirit with some Lamb Tagine for Sunday dinner. I don't recall it being this cold so early in the season. Perhaps it's payback for such a mild season last winter. I'll have to get on the ball in planting our winter garden.

    I made this soup for Thanksgiving 2022, which was a huge hit. It was very easy to make. The smoky flavors from the bacon and caramelizing the butternut squash are absolutely fantastic! Can't wait to try more of your recipes Kevin. Thank you!

    I’m sure you’ll do it too when you’re not on camera, I always save some of the thin stock to clean out the blender; definitely waste not, want not.

    Wow! I just finished a bowl of your butternut squash soup. Very delicious. I never had sherry before so we bought a bottle yesterday. The sherry has a very nice flavor and I really liked the smell of it. My only disappointment with my soup is that it did not puree as well as it should have. I need to buy a new blender, I only have a smoothie maker and it's about 16 years old. Thanks for the recipe Kevin, it's a keeper.
    I do have one question. Why can't you freeze the soup if you had the cream to it?

      Hi Lori - From reports I've read, one should not freeze soup that contains cream, as the soup will turn grainy when reheated. Seems that conventional bit of wisdom is incorrect. I froze some of this butternut squash with cream intact, and it reheated perfectly -- no graininess whatsoever! So glad you tried the soup and that it was delicious for you!

    Could I use pureed pumpkin instead of butternut squash in this soup? Recipe is very similar to a pumpkin bisque that I make.

    This is a fabulous soup. I have been making this for many years, but one thing I noticed that wide mouth olive oil jar. My jars tend to smell rancid when I can’t get in there to clean them properly but this one has a wide mouth. Did you purchase it from Amazon?

    I'll admit that blending soft cooked bacon and onion had me skeptical but this soup was "souper" tasty. I served it with a bacon onion quiche with potato crust and it was a real hit. Did you know that you can thaw tater tots slightly, smash them in the pie pan and bake until crispy to make a simple crust. I'm a fan of this recipe and will definitely serve it again. My only question is how do you have time and energy to make this soup and all the trimmings for Thanksgiving dinner?

    I am a vegetarian. I will try to make this soup but skip the bacon.....
