All of the hat crochet projects I've found have been double crochet. This is the first single crochet I've come across and it's so simple and easy to follow. Thank you.

Indeed, merino wool is softer than the acrylic yarn. I have used acrylic for crocheting. As such, it is not identical to acrylic. I recommend using a larger crochet hook for a looser stitch. Continue increasing until you reach the desired measurements.
It's because she's doing a spiral and not rows. You need the extra chain one to get to the height of the next row. But that's not necessary when going in a spiral.
Yes my only teacher has been RUclips videos and I slow the playback speed to be able to mimick any movements I'm not familiar with it helps sooo much and sometimes use It to fly through other parts.

You don't have to do magic ring. I myself doing the same thing. Chain four and then do what you feel confortable to do

How much must you increase for a 24" head
You can measure 24 inches and crochet to that measurement. You can do another row of increase

You can go to the settings and slow as much as you need to. This is the slowest I can
I am just learning and the movements are not easy to fallow, they are much to quick.
