When he said, “because notes ARE frequencies...” YES, this! (and vice versa). This is a very musical way to conceptualize and apply EQ to any instrument.
That notch filter part on the vocals is also the best thing I ever discovered with guitar amp sims. It always sounded fake and harsh before I understood that there's just a very tiny frequency band were it's ugly and earpiercing and if you take it out it suddenly sounds awesome.

A lot of that sound is lively drum room mics - Nick has talked about how important room mics are for his sound and capturing a live performance feel. The other thing would be lots of layers of saturation, tape, tube etc. "Nature Boy" showcases this really well.

Soundtoys plugins are incredible, and everyone should take advantage of the sale to buy them while they're affordable. I'm getting the Little Plate, Decapitator, and Echoboy while they're cheap.

I suggest downloading the free trials and doing comparisons in your environment on your own music, although obviously as the video isn't titled with any of the plug ins featured why did you watch it if you didn't want his opinion on his 5 Must Have Plug ins?

Single loud notes in Basstracks: Sometimes single notes, especially in basstracks stick out BECAUSE OF YOUR ROOM. Always check with headphones if that happens! I've had this problem in the past.. I did everything.. dynamic eq, compression, notching stuff out. None of which was delivering a good result.. until I figured out it was simply my room and in order to "kill that note" I had to hurt the overall track unreasonably hard. ..just a heads up if anyone runs into this issue: CHECK ON YOUR HEADPHONES. I know, usually the room is better to hear stuff.. but sometimes the room is the problem.
UAD is not the only company who emulated "the great anologue"-units. But it's surely the most expensive one. If you can't afford all of that I personally like the emulations from IK Multimedia a lot and you can get them at a fraction of the price. They are not worse. There are always little differences between emulations from different companies - but the same goes for the actual hardware-pieces. So if you are on a budget, don't ruin your life in order to save up for UAD.. pricing is unreasonable.
