The heat comes not only from the bottom, the whole chamber is warm and thermal radiation is from all around. The meat itself can transfer heat as well, and we control the temperature at the bottom of the chamber at a constant level by temp sensors and algorithms. It just takes some time for the whole meat to be cooked, and we armed the machine with a probe so users can see the food temperature in real time. There may be a slight difference between the top and bottom surfaces, but it does not affect the final result at all :)
After numerous tests on this issue, we concluded that fillets no more than 4 cm (1.5 in) thick can be cooked evenly, and if they are more than 4 cm (1.5 in), we recommend wrapping them in foil. 😊

Hi Artur, Neovide is different from an oven. In Neovide's Marinate and Sousvide modes, the machine creates a vacuum space in the chamber. And in Marinate mode, the machine runs vacuum-release-vacuum cycles per 5 min, which can infuse the steak with ingredients!
@@thespacetec it would be fun to see someone try this and make a direct comparison to sois vide. For now I still believe sois vide with vacuume bags and 24h infusion of spices is a unique experience, but if you get 90% of the result with 10% of the mess... it might be interesting.
Hi Kenny, the food probe is not detachable. If you don't need to use it, you can attach it to the clip under the lid. If it needs to be replaced, please contact a professional. 😊

Searing on a nonstick aint healthy nor sustainable for the nonstick piece itself as higher temp will damage the nonstick layer,,, fix that please for a better product.
Hi Hussian, the temperature range of Neovide in its sous vide mode is 20℃ - 95℃ (68℉ - 194℉), in which the nonstick coating won't be damaged. And the sear mode temp range is 150℃ - 210℃ (302℉ - 410℉), not very high either. Also, it's up to users to use the sear mode or not. 🙂
@@lighttheoryllc4337 What do you mean by anodized cast iron and nickel titanium coated cast iron? Of course you can use either of these pans to sear the food seperately😊 The tray of Neovide is made of a lighter composite material, offering another option for searing.
@@thespacetec So, as an Executive Chef, I did a lot of material research. There are these set of Pans made of special materials a light weight cast iron blended with titanium, some are anodized non stick and some are just titanium Nickel cast iron that are super light weight, great seasonable flavor, amazing for searing. That would be perfect for sear mode if molded into the shape and size of your Neo vide pan. Hope it helps

If only one side of the meat is in contact with the heating element, how do I get an edge to edge desired doneness?

No humidity control so.. without bag it will dry.
I saw other brand have humidity control which you can put it at 100% so food not getting dry.
If cooking for a long time, wrap the protein in foil and it will keep moist. 😊

Isnt this more comparable to an oven? I am not sure how this would infuse the steak with chosen ingredients.
