Like how you explained the cleaning process. My buddy likes to brine his catches in a lot of salt water/lemon juice mix for sometime to help remove some the fishy, swampy tastes.
What type of grill is this? It seems so mobile and convienent for cooking outside so you don’t smell up the kitchen. What type of outdoor grill do you recommend Chef Williams?
I'm surprised you don't have the store descale the fish before you take it home the Asian stores around me here in San Jose California will go ahead and gut it and descale it if I ask them to all for free
I really do enjoy your videos and the simplicity of your cleaning and cooking techniques. Other videos will have your head spinning and too many loose ends left untied because of the overload of information (much of it probably unnecessary). I like the simplicity and the ease of learning thats in your videos. Plus I like learning about eating other parts of the fish like the roe and swim bladders. Pretty cool stuff, keep up the good work!
They're Russian half sour pickles I get from the farmers market. look it up I'm pretty sure its just cucumbers, salt, water, and some spices. then pickle it for a couple days
I would have the shop clean and scale but leave whole. Grilled whole fish has a very different flavor. Last year I made my own moon cakes. Its work but great !
Not a bad job, However as a chef let me tell you right now. That you never cut towards yourself that is a disaster waiting to man, also their is a knife for this job I don't recommend a chefs knife for this simply because the fish isn't that big to start with. You could have done this with a boning knife and it would have gave you a better cut and control of the knife. Otherwise nice job on it though.

I caught stripers at Lake Powell....not farmed. The most greasy fish I ever ate. Cooked it in a pan; grill and oven,, never could get rid of the translucent look and greasy taste. Wonder why yours was white after cooking, mine still looked raw!
I would be killed if I cleaned fish inside, when I get home from fishing everything is done outback at my cleaning station and I jump in the pool before entering the house, it gets messy when I do it
hate to be negative but so many unnecessary steps in cleaning them. if you want skin on just scale then filet and cut around rib cage. dont even mess with the guts or gills.

There are no striped bass in michigan you fool. Those are most likely white bass.

The grill must take some maintenance to keep clean. If you have methods to make that easier it might be a good video to make.

They're tagged - commercial caught in the ocean. Way more flavorful than the freshwater ones (Hybrid and farmed)
