In the U.S. this is considered trash fish, here in Croatia, carp has same price as trout, 3 times more expensive than sardines, same price as mackerel and double the anchovies price. Most known dish is fish paprikas. Here carp is mostly sold as farmed fish. Farmed oily carp is closest to "real" meat and some peope in Croatia consider carp as sea pork or water pork....hard to translate.
I get all sorts of ignorant looks from people here I'm the states when I talk about eating carp. They generally confuse its eating habits with catfish, and they love catfish! Sheesh!

And since commenting on this video I've learned that if you simply make lateral cuts about 1/4 inches apart down both of those sections that contain the Y bones and you cut through the Y bones but not all the way through the fillets. Then you can bread them, being sure to get some breading in those slits, or bake, boil however you want to prepare it. And those Y bones are supposed to either disappear, dissolve or at least become soft enough to eat without any problems. Although I have not yet had the chance to test it for myself. But I've seen several other RUclips videos where they claim is a real thing. And I've watched them happily munch the whole fillets without spitting even a single bone. I can't wait to try it myself.

In Argentina, this fish is taking over most water bodies and reducing the population of autochthonous species (as far as I know, carps were introduced in the 19th century for sport fishing). Most people hate them but I've seen some fishermen preparing them in a different way: they remove a nerve (or vein) that goes from the fish's head to its tail, in both sides. People who usually cook it this way say that it tastes way better. In my case, I haven't had the chance to catch one (I suck at fishing), but if I do, I'll give it a try. Common Carp love corn. Go to the same spot everyday and throw in some corn. After a few days they will be easy catching with corn on your hook or a hair rig. Use a 1oz to 3 oz weight tied to the main line (30lbs braid is good) side of a swivel with a 6" to 12" leader. Tie the weight using 10-12lbs mono line, so if the carp gets into weeds the weight will snap off before your line snaps. When they suck up the corn and your hook, they will feel the hook and try to throw it, but the weight should set the hook deeper for you. Make sure to use a small, but heavier gauge hook. Finally, don't forget to secure your rod somehow that's easy for you to pickup from, the carp can and will pull your rod in the water!
Grew up next to the Columbia River in Eastern Washington. Common Carp are abundant in that river and my grandpa used to take the one he caught home, cut them up, then bury them in the garden. Seemed to do the trick for whatever was growing in the garden.

Professional chef here, retired after 28 years. As an expert, I can describe the best cooking method for American Carp. First, you nail it to a waterlogged 2 x 4 through the head and slow roast it over an open charcoal fire. After an hour, you throw the fish away and eat the board.
In Sheboygan Wisconsin as a kid in the 1950s we used to take a few Night Crawlers down to Sheboygan River in March as the Lake Michigan Suckers would run. Would not catch many but they were big(25-30 Inches), Like your carp they had those y Bones but in cold spring water they were really good eating. Later in the summer carp would be in the slow warm muddy water not too great. Here in Colorado, my local lake pretty good and might try it!! Thanks for the post, Mark!!

In Slovakia and Czechia we have long tradition to eat carp and especially during Christmas. It tradition because of Christianity. In old days people strictly followed fasting and fish was the way “not eating meat”, pork, chicken, lamb, beef, . . . In Czechia there are farms for carp in area of Trebon city which are sort of most famous. But carp is farmed around all land of former Czechoslovakia. We eat it nicely breaded and fried with potato salad (Russian stile). But Hungary those great people know to enjoy this fish even better and have various recipes like fish soup Halaszle which is essentially red paprika based soup same like Goulash and it is amazing. You need to try it at least once. If you like Hungarian goulash, you will like Halaszle.
I've been told that you can grind up the meat with the Y bones in it and make fish patties. I've also heard that you can pressure cook that same meat and the bones will disintegrate much like they do in canned mackerel or salmon.
Absolutely correct. I can pint jars of them. Bones dissappear. My favorite way to season is add one tablespoon of ketchup, 1/2 tsp of salt, 1/4 tsp liquid smoke, and my secret (not anymore) ingredient is 1/4 - 1/2 tsp of ZATARANS crab boil that I remove from sachet and whiz up in my coffee grinder to a semi-fine powder. It's a hit with everyone who has tried it.

Mark a lot of people run carp through a grinder then add spices and make fish burgers out of them, cook in oven or deep frying. Patty’s are delicious and bones are ground up so you don’t ever notice them.

It will depend on the water you take it from, Carp like warm lazy water perhaps muddy and that will not produce a good culinary experience!! Out of fresh cooler water the fish will taste different. Take a trash fish like suckers!! In Spring fed cool water they are excellent eating putting up with their Y Bones!!
Many people say that it tastes more like veal than fish. I have not tried it yet, but the next one I catch is coming home with me. I find them in cool/cold clear water in the rocky highland lakes in my area.
Do you ever eat suckers? Here in Canada most people turn their noses up at carp and suckers, catfish too. I know that catfish are delicious but I've never tasted carp or suckers.
I live by wright patterson air force base here In ohio. You wouldn't want to eat the carp you catch around here. They literally tell you that after you take the hook out.
Just trying to help you out. There are a lot more easier and quicker ways to fillet a carp. Watch some professional guides on RUclips. The carp is very similar to a redfish. Look at some of those videos.

Carp are nasty trash fish. I call them rice bass or ghetto salmon since mostly chinese and blacks like to eat them.

Maybe the water is dirty. Also bigger fish tend absorb more bad stuff from the water over time from being in it for longer.
