Last night I prepared 30 kgs of each on large flat trays. No Steam, no butter, just oil, salt and pepper and honey. The trays ( thick metal,) take all the surface of an MKN oven. Heated the trays and displayed the root veg touching the whole surface. I achieved the consistency and caramelised result you show in the video. Absolutely beautiful and the best result I ever achieved in years. Thank you.
Well well, just found your channel and I've never seen parsnips and carrots done this way before! I was planning on doing something else, but will now give your method a go! Good to think that we can get them done early to the point that they just need finishing off in the oven, could make things easier. I will do it this way this year...!

I'm using your technique at work for fine julienne rainbow carrots. We are gonna serve them cool with a bbq demiglaze chicken, eloté arranchini and an arugula salad with whiskey vinegarette

Loving the recipes. The videos are really informative and going to use lots for Christmas Day dinner. If I wanted to add clementine juice to the carrots would you add with the butter during the deglazing process or when the carrots go in the oven?
Great idea mate! I would say in the pan with the butter. It will need a little longer to reduce to a glaze but I'm betting your carrots will taste better that mine! 💪🏼 Happy cooking and Happy Christmas 🎄

Both of those will be more likely to burn than maple or honey, so maybe add it later in the roasting. Pomegranate molasses sounds particularly tasty though!

Could you do the caramelisation in the pan the day before and then keep them in the fridge overnight before doing the final oven stage on Xmas day?

Can I use pomegranate molasses or dates molasses instead of maple syrup p?
Both of those will be more likely to burn than maple or honey, so maybe add it later in the roasting. Pomegranate molasses sounds particularly tasty though!
