Zojirushi Buttermilk Bread

  • Ingredients:
    1 3/4 cups + 2 tablespoons buttermilk (slightly warmed to about room temperature)
    4 1/2 cups white bread flour or 1 1/4 cups + 3 Tbs wheat gluten
    2 tablespoons sugar
    1/4 teaspoon baking soda
    2 tablespoons butter (soft)
    1 1/2 teaspoons salt
    2 tablespoons dry milk powder
    2 teaspoons active dry yeast
    Steps
    Step 1:
    Place all ingredients in bread pan (buttermilk on the bottom) do not allow the yeast to touch the salt or buttermilk.
    Step 2:
    Set to either light, medium or dark crust - cycle #1- 2-pound loaf.

    I have the same machine. My loaf just came out of the machine. I can’t wait until it cools. Looks just like yours. Gorgeous! Thx for posting.

    1 teaspoon of Vital Wheat Gluten to 1 cup of all purpose flour will give you bread flour. VWG is sold on amazon, good thing to have on handy these days since bread flour is so expensive and sometimes not even there.
