    Red Cabbage Hummus
    Ingredients:
    300g chick peas
    half a red cabbage
    3 tbsp Tahihi
    1-2 cloves of garlic
    1 apple
    juice of 1 lemon
    3-4 tbsp balsamic vinegar
    4-5 tbsp olive oil
    1-2 tsp cumin
    black pepper (I used Tellycherry)
    rosemary
    salt
    to garnish:
    thai basil
    feta cheese
    olive oil
    cherry tomatoes
    optional: sesame
    There are billions of hummus recipes. Prepare the hummus as you know it. Maybe like this: wash and strain the soaked chickpeas, mix them together with garlic, lemon zest and juice, cumin, tahini. Meanwhile, add olive oil in a controlled way. For a creamier consistency, add a little ice water. Set aside the finished hummus.
    Cut apple and red cabbage. Heat olive oil in a pot and add red cabbage. Add apple pieces, rosemary, salt and black pepper. Deglaze with balsamic vinegar and add a little water. Then simmer for 20 to 30 minutes at medium heat. Grind the cooked mixture into a puree and add 2-3 tbsp hummus. Serve, enjoy ;)
