Enjoyable Beetroot Burger?

Hi everyone! Let's apply the importance of contrast on a dish that everyone loves. Thank you for watching, have fun, enjoy! :)
For the pattys take:
beetroot
red onions
garlic
balsamic vinegar
oat flakes
lentils
smoked red pepper powder
cumin
salt
black pepper
For the Harissa Mayonnaise:
egg yolk (keep the egg white it's valuable protein)
mustard
lemon (juice + peels)
(neutral) oil
salt
pepper
harissa (a spicy sauce made from chillies and beautiful spices like cumin...originally used in North African cuisine)
Since I completely messed up the dough for the burger buns there is no meaning of showing the recipe 😄 (check out the zillions of pro baking recipes for that).
