Respecting Food When Cooking These 2 Italian Dishes

  • Hey people, I wanted to make a short video about food waste since this topic deserves more attention. I love cooking just as I am interested in all kind of stories behind food. The food waste issue is a special one as it has a significant impact on our society by disrupting the natural, economic and social systems we depend on.
    There is no one-size-fits-all solution. It’s multi-dimensional. Fighting food waste requires a collaborative effort across the entire food chain. But there is one thing we can do for sure: rethink our overconsumption, and learn to cook with leftovers and scraps!
    Here are two recipes inspired by this idea:
    *Risotto*
    Heat the olive oil. Cut the shallots and peppers into small pieces and fry them in olive oil. Add the rice and toast them until they look a little translucent. Add wine vinegar (or wine). Once absorbed by the rice, turn the heat down and start pouring in the homemade stock a little at a time and keep stirring until it's absorbed. Add Mascarpone or creme fraiche to get an extra creaminess. Finish with Parmesan cheese, lemon, basil and lemon juice. Season with salt and pepper.
    Ingredients:
    - for the stock: all kind of vegetable scraps or leftovers you have
    - 170 g rice (short-grain, like arborio)
    - 50 mL wine (or wine vinegar if you don’t drink alcohol)
    - 2 shallots
    - 1 paprika
    - salt and pepper to taste
    - 2-3 tbsp parmesan cheese
    - juice of 1 lemon
    - herbs: basil and lemon balm
    - 2-3 tbsp olive oil
    - 100 g Creme fraiche or Mascarpone
    - optional: cherry tomatoes to garnish (prepared in the oven/ 170°C/15 min or air fryer)
    *Carrot Top Pesto*
    Separate the carrot greens (which is not waste!), wash and dry them. Chop and put them in a blender. Add a little olive oil and mix it. Then also add parmesan cheese, garlic, lemon juice salt, ground pepper and nuts (like almonds, cashews or pine nuts) and mix again until you are happy with the texture.
    Ingredients:
    - a bunch of carrot greens (
    - 1 clove of garlic
    - 1 tbsp grated parmesan cheese
    - 1-2 tbsp nuts (almonds/ pine nuts/ cashews)
    - 3-4 tbsp olive oil
    - salt to taste
    - ground pepper
    - juice of a lemon
    🛠️ *Quick Tips to Reduce Food Waste*
    - *Plan Your Meals:* Avoid overbuying by planning your meals. Make lists.
    - *Smart Shopping:* Never shop when hungry and resist impulse buys. Use Apps like Too Good To Go.
    - *Proper Storage:* Learn how to store food correctly to extend its life.
    - *Understand Dates:* Know the difference between “use by” and “best before” dates.
    - *Get Creative with Leftovers:* Experiment in the kitchen and turn leftovers into new dishes! ou can also start composting.
    - *Focus on reducing high environmental impact foods* (meat, farmed shrimps, butter, cheese…)
