    20 item grocery list for weight loss (budget friendly)
    Potatoes
    Sweet potatoes
    Rice
    Oatmeal
    Black beans
    Chickpeas
    Lentils
    Bananas
    Apples
    Frozen blueberries
    Box of organic mix salad
    Bag of baby spinach
    Kale
    Broccoli
    Frozen peas
    Onions
    Carrots
    Unsweetened plant milk
    Lemon juice
    Spices: onion powder, garlic powder, cinnamon,dill, curry powder, chili flakes, ginger powder, cumin, and paprika.
    --
    Optional extras:
    More veggies - cucumber, bell peppers, Swiss chard, squash, etc.
    Canned diced tomatoes
    Pasta
    Oil-free pasta sauce
    Sugar-free Ketchup
    Liquid smoke
    Nutritional yeast
    Romaine Lettuce cups
    Fruit
    Bags of mixed frozen fruit
    Fresh garlic
    Balsamic glaze
    Other vegetables: zucchini, tomatoes, etc.

    Barley Potato Broccoli Soup Recipe:
    Ingredients:
    3 medium russet potatoes, peeled & diced
    1 x tsp of garlic powder
    1 x cup frozen broccoli
    1 x cup frozen corn
    1 x diced yellow onion
    ½ cup cooked lentils (from can, I made this recipe before I had a rice cooker for my lentils)
    1 ½ x cup cooked barley
    1 x tsp cumin
    ½ x teaspoon of dill spice
    5 x cups of water
    Pinch of sea salt (optional)
    Instructions:
    1. Cook barley according to package (tip: pre-cook a large batch at the beginning of the week as part of your meal prep.)
    2. Sautee diced onion with 1 cup of water in a large soup pot on the stovetop over medium heat for 5 minutes (until translucent) - stir often so that it doesn’t stick to the pan.
    3. Peel and dice the potatoes.
    Add potatoes, broccoli, corn, and 4 cups of water.
    4. Cook for 20 mins on med-high heat.
    5. Add cooked lentils, stir and cook for another 1-2 mins before transferring ½ soup mixture to a blender and blending until smooth.
    6. Transfer blended soup back into the soup pot with the rest of the soup, add in the barley, cumin, dill, sea salt, and optionally, chili flakes if you like spice.

    I’m really grateful that you’re doing this challenge. I need a bit of support to keep motivated. Thanks so much. One question, I was able to find a sugar free ketchup (Truemade Foods) but it has some salt in it. Aside from not adding any table salt, should I be avoiding condiments that have a small amount of added salt?

    Red lentils in the rice cooker, how much water to 1 cup of red lentils and what setting do you use? Thanks.

      1 cup lentils and 2 cups water. It works for me.

      My rice cooker only has one setting. ‘Cook/warm’. It shuts off when the grain is cooked and all the water absorbed. I use just over 2 cups of water to 1 cup lentils.

    Is this diet safe while pregnant, did you eat this way during your pregnancies?

      I had tofu, avocado and some nuts and seeds. Oil free should be fine when pregnant- check with your doctor. Generally, as long as you’re getting enough calories. Same with breastfeeding.

    I love love love white rice but I still gain weight if I eat it, has to be brown rice which doesn't taste as good. Same with potatoes love them but they still make me gain weight.

    I never eat rice or oatmeal . Very high on glycemic index.
