The cicadas have been super loud here in GA too. My son plays video games and i have to text him for him to answer any questions...ridiculous. lol Your brunch! Team flavour for sure! My boyfriend always says I use too many herbs haha. I love putting rosemary and paprika on my roast potatoes.. but he thinks it abit much. But it's soo good!
Okay so I don't know how the ones you got in San Diego were prepared but HERE'S HOW TO MAKE CHILAQUILESt, from a Mexican (trust me, it's even my university's official dish): -You can use tortilla chips if you want but if you want the authentic thing, then use tortillas and fry them yourself in a pan. -For the sauce, take tomatoes, onion and chilli peppers if you want and fry them as well until they get a "roasted" look, then blend them with a bit of cilantro and to that sauce add salt to taste (my mom would also add a bouillon cube or powder) -For garnish we do cream and cheese (but apparently un-sweetened greek yogurt is a healthier alternative) Finally, you can eat them with whatever protein you want. You used scrambled eggs but you can also do black beans, grilled chicken, grilled meat, etc. They also taste delicious with avocado!!! I hope you do see this and it's helpful to you!

For the chilaquiles, you can still make them. Slice up the jalapeño and 1/4 of an onion into small pieces. Sauté them and then add one can of tomato sauce(if they have it), then add some garlic powder, salt and pepper ( to taste) and then add your tortillas chips and mix. Once they are fully coated with the sauce add 2-4 eggs and mix so they can cook. Then it should be done. An easy and quick recipe for them. :)

I don't really like onions in my food either, but I like the flavor. So we'll either use onion powder, or we'll sauté the onions until they're clear, then put them in the blender and then use them. I think it's a texture thing for me, so that way I get the flavor without even realizing they're in the food. My mom does that with onions and celery for our stuffing at Thanksgiving too. I know, I'm a child 🤷♀️😂😂
