My 1st cognac was Remy Maren VSOP, but not a fan. I love Martell VS and VSOP. I will have to try their XO.

Is there any burn or bitter ?

Burn wise, if you are used to drinking spirits neat. Then as this is at 40% it has minimal burn, if any at all. The age also helps with no burn.
I don't recall any bitterness the finish may have some burnt caramel notes. but it is well balanced with with other spices etc.
