I just made my first quiche using this video's instructions as a guide. The results were fantastic! I made the egg mixture precisely per instructions but went on my own path the rest of the way. I blind baked a premade deep pie shell (Kroger, just because they were on sale.) and then I sauteed onions, garlic, mushrooms and spinach in canola oil and butter. I put the veggies in first then layered the cheese and egg mix over it. The cheese mix consisted of Romano, Parmesan, Cabot extra-sharp white cheddar and kroger medium cheddar.
My wife quit being mad at me for a few minutes and gave it an 8 on a scale of 10. My beagle gave it a 9.5 on the begging for more scale.

I will make this for Easter morning. I will add an extra egg and use heavy whipping cream, hold the nutmeg, and instead add ‘Slap Ya Momma’ seasoning instead. I will roll my pie crust, and then do a fancy edge. Then boil potato cubes, dry, then put into bottom, brown some loose sausage then dry using paper towels, add. Then sprinkle chopped green onions, and a cup or so of medium sharp cheddar. Bake. Stick in fridge. I will also be making cinnamon rolls, warm up the quiche, the combination a wonderful Easter morning breakfast with minimal prep. 🤗

    • @allrecipes
      @allrecipes  9 лет назад +14

Hey, HelloItsKylee, no dumb questions in cooking! That's how you learn, so never hesitate to ask. For this quiche recipe, milk will work, but the texture and flavor won't be as rich and wonderful as with half and half. Another option: if you have any cream in your fridge, you might use 1 cup cream and 1 cup milk. Ingredients
    6 eggs
    2 cups - 500ml heavy cream
    150g - 5.2 oz bacon
    150g - 5.2 oz smoked ham
Nutmeg - a couple shakes or a few grates
    Salt & pepper
Pie crust (see my recipe or buy it ) (Approx size of quiche pan: 10.5 inch or 27 cm)
    Steps
    :
    Step 1
Slice the ham and bacon separately and cut into lardons. Add the bacon to a frying pan on moderate heat and fry until slightly crispy, then add the bacon and cook for 60 seconds. Turn off heat and leave aside.
    Step 2
In a mixing bowl, crack and add the whole eggs, season with salt and pepper and some grated nutmeg. Beat the eggs using a whisk then add the cream, mix well.
    Step 3
Line a mould with the pastry dough, prick a few holes using a fork, place some parchment paper and add some blind baking beads or rice to keep the pastry flat. Bake for 20 min at 400°F - 200°C
    Step 4
Once cooked, remove paper, baking beads and arrange the bacon and ham inside the pastry. Gently pour in your egg mixture, but don’t quite fill it to the top just yet. Place it in your oven, then continue filling it whilst in oven (avoids spillage). Fill it to the absolute maximum of your pastry height but do not overflow. Bake for 30 min at 320°F - 160°C
    Step 5
Leave to cool 30 minutes before removing from tin. Serve and eat warm.

Brush an egg white over the pie crust so it won’t be soggy, before adding ingredients.

can i add milk or heavy cream?

Thank you for your question, Kaycee. This recipe calls for 2 cups of half an half. You could use a cup of milk and a cup of heavy cream in its place. Enjoy!

You bet, Katie Baars. It won't be quite as rich as with half 'n half, but the eggs will set the custard regardless. Here's a link to the original recipe if you want to review the ingredients: allrecipes.com/recipe/46570/basic-quiche-by-shelly/
