    Fabulosity. One of my fave foods. I'm curious about the texture of the skin when smoked at low heat.

      @LeRoyandLewisBBQ ahh, must have missed that part of fillet and prep. My favorite sushi restaurant is owned and run by a Mexican American husband and Korean American wife - fused both cuisines into sushi. One of my many favorites, they broke down whole salmon, salt and sugar light cure, and very lightly smoked. Choice of local corn tortilla or a housemade bao bun. A slather of roasted Serrano crema on base. Then salmon. Then homemade kimchi from family recipe. Then topped with removed salmon skin fried crisp. So. Damn. Good.
