My favorite sushi restaurant is owned and run by a Mexican American husband and Korean American wife - fused both cuisines into sushi. One of my many favorites, they broke down whole salmon, salt and sugar light cure, and very lightly smoked. Choice of local corn tortilla or a housemade bao bun. A slather of roasted Serrano crema on base. Then salmon. Then homemade kimchi from family recipe. Then topped with removed salmon skin fried crisp. So. Damn. Good.
Evan's dad is the best. I need to get back to Austin soon. All of the staff at L&L are amazing people.
