looks awesome! have to ask, was the thickness of the pork steaks a culinary choice or were you trying to make all the meat fit on the Chud box at once by having less thick steaks vrs more thinner ones?

Not everyone dips brisket in a sauce. Purists tend to eat it as-is. Keeping the bark intact allows for both parties to enjoy their eating experience.
